With elevation we're getting less than 10 PSI rather than 15.  That's why I double the (longest) time used with a 15 PSI PC.




Before I started I did a bunch of experiments including weighing sterilized oats for water content and putting autoclave tape inside of jars to confirm adequate temperature. (Stipe has since confirmed that IPs do sterilize jars with his more rigorous testing equipment and methodology.) Anything over 90 minutes and the temp hits 250° F but the oats didn’t look right until 2:30. Another fifteen minutes and they had the hydration I was looking for. At 3 hours they are beginning to burst.

Elevation does affect timing, for IPs and PCs alike, due to pressure reduction. 15 psi is not a magic number for sterilization though it’s a nice number to work with. It all comes down to transference of energy via time under temperature. I want to run jars as long as it takes, no less and no more.
