You’ll be fine. Venting the IP is advised but is not quite as important as it is in the much larger canners. Those all have more air space to clear and hold at least 2 1/2 times more jars.
At the beginning (and for a couple of years) I did not vent my IP. Now, after following Stipe’s work on measuring sterilization, I do. But if I forgot I’d not lose any sleep over it. Especially with a 3 hour pressure cycle.

Venting at the beginning is very important. Your PC timer should only start after at lease 10 min of venting. I prefer 15-20 min.

Are you using a PC or an IP? With the IP venting is a good idea but not as important as with a PC.

What seems to be the minimum water depth for a 3 hour pressure cook (plus 5 min vent)? How much does the water level seem to drop during a 3 hour cycle?
Trivet high? Deeper?
I'm doing a bunch of shallow, lightweight containers, and would rather not start out with them floating around if I can avoid it, but I also don't want to run dry before the time is up.

I've ran 3.5 cups of water for 3.5 hours with a 15 minute vent with no issues. Instruction manual says to not PC with less than 2 cups. I'd say 3 cups would be fine.

Instant pots are mostly sealed so you aren’t gonna lose much water compared to a traditional pc

I go trivet high for 15 minute vent and 2:45 cook. There is plenty of water at the end. I’ve not measured though.

Question regarding when grain is dry enough after soaking.
Last night i did my first jar with WBS. I soaked for 12 hours, drained, rinsed, etc. In the strainer, there were no more drips. I then put WBS into just a large tub i have nad put a fan on top to help air out. I moved the WBS around with a spatula until i saw no more visible water at all on teh bottom of my container. I grabbed afew handfuls and squeezed as hard as i could and no water drops anywhere.
Then, i put my lids on, wrapped top of lids with foil, put on instant pot for 3 hours on high.
Today i noticed water at the bottom of the jars. Not a lot, but if you move the jar to an angle, you can see the water move.
Is this too wet or is having a minimal amount of water from the grain soaking ok at the bottom of the jar? When i shake the jar stuff sticks to the side slightly also (i did not use any gypsum on the wbs)

Glad I found this thread! Just purchased an instant pot, the pro model that we have here in Australia. 8L is big enough to fit 3-4 large mason jars and 6 half pint jars. It has a handy sterilise function for all my jars and tools, and is definitely an upgrade from my pot on the stove.
A little disappointed in the response of the "purists" when posting in the group about electric pressure cookers. Some of us just aren't ready for a 23q presto! With the amount of success people have with this method, I don't understand the hate electric cookers get. A 25-30 minute pressure cook gets the popcorn just right. I'm going to jar the it up and PC for 2 hours. Tomorrow I'm testing it out with a curry 🤤

Instant pots and air fryers is poor dehydrators. Consensus is to buy a dehydrator. Better than losing potency and risk mold due to poor drying.

This thread deserves a bump. I found out that my Presto does not work on induction after moving from gas so I tried the instant pot. Friday I sterilized a pre-sealed small, 2 liter spawn bag of WBS in the IP for 3.5 hours, venting for 5 minutes. I will just leave it alone for a week or two and see what happens.

Standard instantpots will go to 15psi at the start, then back down. I have spoken before about repeatedly turning it off and on again, I have not tested it with a temperature probe but will but I think it does go through the 15psi start up cycle again.

There are sensors inside the IP on the bottom, they call them pressure sensors, I am not sure if they truly are but they can definitely be adjusted and the pressure/temp can be got higher. They are factory set and covered with white adhesive/silicone stuff, this can be scraped off and there are screws you can adjust. People get a C6, C6L or C6H error if they are faulty. Of course this is dangerous if you do not know what you are doing, but even if set to a much higher temp/pressure it is designed to just vent if it gets too high.

Mine is 12.5 psi, but I never saw an issue just increasing the time by half an hour or an hour. Or maybe just 50 minutes doin agar

I have a knockoff(Farberware) that says it runs at 15PSI for the rice/risotto setting only. It's only a 14-18 minute cycle though, so that would be a pain.
I just stick with the 2hr cycle.

A week later the bag looks good. I will knock it up with some LC today. (Edit: Knocked it up with 2 mL PE LC)
I will mention that the grains were a bit on the wet side and some were burst. I followed the prep from this thread, but I did rinse and remove floaters before. I also may not have let them steam long enough.

The bag never took off. I see a tiny bit of white, but also a slimy bacterial layer. I suspect the sterilization was not enough.
The LC on two other larger bags of rye sterilized in a Presto is doing much better.
Going to try jars in the IP in stead.

Tiamo, I use an IP for quart jars exclusively and have never had contamination related to sterilization. My IP holds 4 quart jars and 2:45 has been enough time for WBS and oats, 2:30 for millet. I’m at around 5,500 feet in elevation which adds a bit more time.

That and the lower pressure of an IP. I run mine for 4 hours for oats. I haven't wanted to "see what I can get away with."
With elevation we're getting less than 10 PSI rather than 15. That's why I double the (longest) time used with a 15 PSI PC.

I don't doubt it. I just wanted to do an experiment and share results for others.
