Pudin's Instant Pot Tek - pasteruization, sterilization, grain prep, and beyond * 38

Hi there. I am the 7th oldest active Shroomery account ('98 babbby!), but I've been laying low for a couple of decades. I've, you know, just been like, busy and stuff. But look, I have a retarded username just like you. Some things never change. I thought why not share a little with the community that has helped me over the years. I mostly grow non-actives these days, but I still have some hopefully helpful things to share.

The Instant Pot. It's a Swiss Army Knife for inexperienced folks and a great set-and-forget tool for others just wanting to do smaller runs of things (4 quarts fit at a time = 1 mono!). I like it because I can leave and do other things while it's choogling away. For people with space restrictions not looking to rock a 23q Presto, look no further. Also, it makes great food and is inconspicuous.

Should you buy a big pressure cooker? If that's what you need, then yes, but that's not what this is about. I have as many Presto's as the next person (also good luck finding one, plus they're like $140 now lol), but I find myself using the Instant Pot all the time because 1) I already have one 2) it's convenient and 3) I don't have to be there when it runs. Right now I see them online for $60 new and used ones are even cheaper. It also has some specifically great uses for agar, imo. A lot of people have had questions to their efficacy over the years, and I'm here to say: It works. This guide is for the IP-LUX 6 quart or larger size. Anything smaller will not hold quart jars.

Pasteurization
This one is my favorite. The Warm function keeps food hot after it has been cooked (obviously). The beauty of this setting is that it holds food at, you guessed it, pasteurization temp to keep it safe from bacteria for up to 10 hours. If you need to pasteurize your substrate or casing:


In case you are an idiot, it's this button.

Method 1 - using Quart Jars:
1. Follow your favorite tek for substrate prep and moisture content. FrankHorrigan has a nice one. (I use cana coir, but you do you.)
2. Load your jars without packing them too densely (it makes it difficult to get out). I use the metal jar lids upside down and don't over tighten. We're not trying to create a seal, just keep the moisture even.

3. Load them into the Instant Pot, and fill the basin with water. I go all the way up the jar. Use hot water so it heats up faster. They will start floating, but don't worry about it. Close the lid.

4. Hit the Warm button and walk away.

Kaboom. The water goes to 165ish and stays there. I run the pot and leave it until later in the day or whatever. If you are in more of a hurry, you can check the temp in the center of a jar with a kitchen thermometer. I just ran a test with 4 loaded jars at room temp with room temp water. It was at internal pasteurization temp at about 3 hours. You could also use a spawn bag, but it will probably take a bit longer.

**Just dumping wet mix into the pot will not achieve full temp at the top**

NOTE: the yogurt setting holds at 110F. It is not pasteurization!



Agar
I love the instant pot for agar prep. Use the agar recipe of your choosing. Here is how I do it.

1. Add 100 ml of cold water to your agar bottle.

2. Add 10g of Agar and stir/shake. Then add your nutrient source. I use LME (15g in this case). I then use a chopstick to breakup any clumps and mix it well.

3. Add very hot water until you are a 500ml and shake it up really well.

4. Place your filled agar bottle or bottles into the Instant Pot. I usually use two 500ml bottles. It should hold four I think. Add hot water close to the level of the top of the agar. Add some empty jars filled with water to keep the bottle from falling over.

3. Close the lid. Set the Manual timer for 20 minutes.
4. Walk away.

If the Warm function is left on, it will hold the bottles at 160 so if you need to wait a while to pour, when you are ready they will cool faster.

Give it a good shake when it is still hot. When it has cooled to pourable temp (~120F), pour the plates in front of your flow cab or in your SAB. 500ml does a 25 sleeve for me with some left over.


Let them cool until the condensation dissipates.



Bonus New fancier Instant Pots have a sous vide function. You can set the temperature to 120 and keep your hot, sterilized bottles in the bath held at the perfect ready to pour temperature (no need to buy the circulator), which is very nice. You could even set it to 185-190 and bring it right to melting temp first if it's been stored, and then swap the water and drop it down to 120.



LC
LC is basically the same as agar, but without the agar.

1. Take a jar and add 500ml of cool water.
2. Add your nutrient source. I am also using 15g of LME here. 
3. Use a chopstick or whatever and stir it up really well. Then tilt it so the unmixed chunks fall to a corner and use the chopstick to break them up until it's evenly mixed.

4. Put it in the pot and add enough water that it goes to about the top of LC liquid. Don't worry, it won't fall over.

5. Set on Manual for 20 min.
6. Go do something else.


You might have some caramelized bits (which you can see here), but don't worry. The mycelium will attach to them first usually and grow out from there. It's not a problem.

Pasty's EzLC's are also great and easy to do in the instant pot. Just make them and cook on manual pressure for 20 minutes.


Grain Prep

This is for WBS.
1. Fill the pot about 2/3 full with hot water and hit the Steam setting and close the lid. Set it to Vent so it doesn't lock.

2. When the water is at a boil, SLOWLY (to prevent boil over, which I failed to do here) add two quarts of WBS and close the lid. If you want to use these to receive grain transfers, use a little less.

3. Put the lid on and set it to Seal. Hit Cancel and then start the Warm function. The time will count upward when the warming function is on.

4. At 20min, strain your WBS and let it steam off in whatever mesh/strainer you are using.

5. Load 4 quart jars evenly with the WBS, screw the lids on, and cover with foil.

For Oats:
1. Measure out roughly 1.75 quarts of oats.
2. Add to the pot and cover with hot water until it is 3/4 filled. It doesn't have to be exact, just enough water for the oats to absorb and cook in.
3. Close the lid and leave the valve on Vent. Press Steam and set the timer for 30 minutes.
4. When the time is up, strain the grain and let it steam off until dry. I have much greater success if i leave it overnight and the grain looks visibly dry on the outside.
5. Divide evenly among 4 quart jars, screw the lids on, and cover with foil.

Sterilization

Spawn
1. Load your prepped spawn jars into the Instant Pot without the rack. On mine the jars need to be arranged so the pressure valve pokes down between them for it to close. All four jars will fit with a little adjustment.
2. Fill with hot water about 1/3 up the jar. Close the lid, and set the valve to Vent.

3. Set the Manual cycle for 3 hours, use the high setting if yours has it. The Instant pot will not operate at 15psi (it can spike to that but rides more at at 242°F), so you must use a longer cycle. My jars are always fine. I have had oats, the dirtiest shit on the planet (in my experience), sit for weeks with no sign of contamination.
4. Vent the steam for 5 minutes or so after it comes to pressure and the red valve pops up.
5. Set the vent to Seal and walk away.


Voila.

After a shake.


Of course, this will work great with PF style jars as well. You should be able to get 12 jars in (with my size at least, ymmv). Use the rack underneath since there will be less water for the shorter jars. 90 minutes should work fine, but I haven't tried this personally.

Tools
1. Wrap your scalpel, tweezers, etc in foil.
2. Place them in a glass or pint jar.
3. Place the glass in the Instant Pot on the rack. Add hot water to the level of the rack.  Close the lid and set the Manual cycle for 15 minutes.

4. Once the steam starts venting, let it go for 5 minutes.
5. Seal the valve and walk away.


last, but not least

CHILI

Ingredients:
2 pounds stew meat (beef, pork, and/or lamb) I often just use one pound though
2 teaspoons oil
1 1/2 teaspoons kosher salt
1 (12-ounce) bottle of beer, preferably a medium ale
1 (16-ounce) container salsa
a few handfulls of tortilla chips crushed up (or a little masa harina instead if you have it)
2 chipotle peppers canned in adobo sauce, chopped
1 tablespoon adobo sauce (from the chipotle peppers in adobo)
1 tablespoon tomato paste
1 tablespoon chili powder (make some homemade powder like a boss and really set it off)
1 teaspoon ground cumin
1 small piece (1-2 inches of INDIAN cinnamon) not the reg grocery store shit

Directions

Place the meat in a large mixing bowl and toss with the oil and salt. Set aside.

Set the Instant Pot to saute and let it get to temp. Add the meat in 3 or 4 batches and stir to brown on all sides, approximately 2 minutes per batch. Let the pot reheat a little between batches. Once each batch is browned, place the meat in a clean large bowl.

Once all of the meat is browned, add the beer to the pot to deglaze.

Scrape the browned bits from the bottom of the pot. Add the meat back to the pressure cooker along with the salsa, tortilla chips, chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine. Put the lid on and set to seal. Set to manual pressure for 25 minutes. When the pressure has released, it is ready to serve, but watch out and don't burn the fuck out of your mouth. It will be extremely hot. I fail to remember this every single time. Top with a little cheese and sour cream or whatever. Drink the other five beers.

p.s. get creative. You can throw anything in there. I just made a pot with leftover chicken and added pinto beans. Amazing.

I'm tip-toeing into the hobby and have been 100% in my head about what kinds of stuff I should be buying. Your post has made me feel comfortable starting with what I have.

Absolutely, just jump in there. It really doesn't matter as much as you'd think. You'll know when you need to upgrade things. Just get a basic grow or two under your belt so you understand the fundamentals and then you're off. :thumbup:

Get in there. I mix it up pretty much every time these days. I did it with chicken and added beans last week. It was awesome. I should change it to say let it cool enough to thicken up a little bit.. it's scorching right after the cycle and kind of thin until it cools to serving temp. Let me know how it goes :thumbup:

Instant pot is a great starter pressure cooker. Especially if you already have one. I would use a PC over the rice cooker, but I started with an instant pot.

I've squeezed bags into it, but wouldn't recommend it.

I only use an instant pot for small batches of agar, LC and sterilizing tools.

At last I can come clean about my secret shame:  I love the instant pot.  It definitely works, I’ve kept jars for 6 months with no contam.

Fwiw, I run oat sterilization for 2 hrs 30 minutes. Came to that after a bunch of experimenting.

Thanks everyone. I appreciate it. I'm taking pics for LC also and will add that on eventually.

No shame in this game, Dharma. If I can turn something on and leave it alone while I can go do whatever else, I'll use it whenever possible. I  now use it for agar, tools, and LC 100% of the time. Also, I was using about the same time for oats (and wbs) also, but figured why not a little bit longer. No harm, and I've had lots of contam issues with oats historically.

Rocky, glad to hear other people are rocking the pot :thumbup:

I've got the 6qt duo gourmet, and I can only fit 3 Kerr quart jars in at one time. FYI for those who might have the same model.

Pudin, you put the jars in to the instant pot without lids or a trivet at the bottom? No issues with burning the grain? And so I understand, you start the pc with the vent open, then close the vent after 5min of it being at pressure?

Nonamekevin, nothing on the bottom. I've never had an issue. The Instant Pot is designed to not scorch food, and I've never had burst or burnt grains. And that is correct on the vent. :thumbup:
