The spicy aroma.. A heart felt warmth that can only be gained by a few selective foods. The fighter of cold days.
Chili.
I'm not talking commercialized chili either..
Homemade chili from the soul. There is nothing better and now that it's chilly outside there is no better reason.
I'll prob wait a bit, a month, to really get into it, but I can't wait.

It's simple..
Once a year myself and 13 other people buy an inflatable pool, line it with a thick tarp, and begin making an extremely large pool of chili. We literally get into it and eat.
We all swore on keeping as clean as humanly possible and vacating the pool if you need to release any sort of bodily yuckies. You also must take a shower before you get back in.
Our group has broke many world records, but last year we lost the title to a sweden group. They beat us by 3 gallons. This year we will be going much much bigger all around.

I like to use chunks of stewing beef rather than ground beef in chili. Also good in spaghetti sauce.

I've used both at the same time before. I do a specific technique when browning the ground beef where basically I'm very delicate to not break it up too much until the very end of cooking so u have chunks of chili seasoned ground beef your biting into rather than some kind of beef gruel.

Alright Cracked... You are getting close to ban-worthy... making a chili thread with no recipe for chili.
Anyone do that sweet chocolate chili? Not too big of a fan of the sweet/savory, but many people I know add chocolate to theirs.

The farthest I've gone close to that is adding coffee for a red eye. I think something like a molè in there could be interesting but I would never go sweet with it.

Reserve 3 tablespoons of bacon fat. 3 tablespoon bacon fat (rendered from the bacon) 2 tablespoon vegetable oil (canola, grape seed or your favorite) 2 red bell peppers, seeds and ribs removed, diced 2 jalapeño peppers, seeds and ribs removed, minced 2 yellow onions, peeled and diced 1 head garlic, peeled and minced (10–12 garlic cloves, 6 tablespoons minced garlic) 1 pound boneless beef chuck, trimmed of fat and gristle, cut into 1/2-inch cubes 2 pounds ground beef 1 pound sweet Italian sausage, casings removed 3 tablespoon chili powder (Try using 3 different chili powders for great depth of flavor – I use ancho, chipotle and Mexican) 2 teaspoon cayenne pepper (Half this amount for less heat) 2 teaspoon ground coriander 2 teaspoon ground cumin 2 teaspoon granulated garlic 2 teaspoon granulated onion 2 teaspoon hot paprika (not smoked) 2 teaspoon kosher salt 2 teaspoon freshly ground black pepper 2 cup tomato sauce 8 ounce tomato paste 12 ounce of your favorite beer (I use an IPA because I like the hoppy flavor) 1 cup chicken stock 2 15-ounce cans kidney beans, with juice 2 15-ounce cans pinto beans, with juice

So... I never claimed to be a world renowned creater of chili.. I suspect most people fallow extensive recipes..
