Invitro means inside the jars. You can wait long enough for them to pin in there. Then pull them out to let them grow up full size if you want normal looking shrooms. You can however let them pin invitro without fear.

If you want deformed squished ones you can just leave them in the jars the whole time. It's called the Hip-tek. That is the correct link even tho it appears to be down. I would however advise against growing them invitro the whole way. I have had poor results so far. It could just be me tho.
