New one with a few questions

Good Morning world of Shroomery! I am totally new here. Interested in growing all types of mushies. Forgive any extremely noob questions I may throw out there.
For starters I am currently growing golden teachers from a grow bag. My first question is that the cake isn't perfectly white but the discoloration may be from the sub straight stuff or some spores that were dropped.
Second I have had 2 flushes but have been having difficulty drying them. I have a horizontal dehydrator I use. I leave them in there a few hours at 122*F. They seem dry on the outside but the inside of that caps are still moist. The caps are very thick so I don't know if they need to be cut up or just more time in the dehydrator.
Also not totally clear on what constitutes perfect dryness. Are we aiming for dry but still bendable or so dry they almost crumble like dry leaves?

The latter. ("Cracker dry" is how it is commonly referred to around here.) A few hours at a temp that low isn't enough time, I'd toss 'em back in the dehydrator until they are fully dry.

Hiya Ch0ppie! Thanks for the link adhoc! Thats what I was thinking. I kept the temp low because I read any higher could destroy the psilocybin. I'll pop em back in for 12 hours. that should do it!

pictures always help
i often leave my 160ish F dehydrator on for 24h don't worry about "over drying" better more then less

I couldn't upload a pic on this post but I was able to add it to my pics.
So another real quick noob question. Its my understanding you harvest just before the veil breaks. The veil was fine this morning but completely broke this evening. There's no black spores or anything. Will this affect the potency at all? I got pics uploaded

No it won't effect potency.
I also dry mine usually for several hours on my highest setting without issue.
The veils will break fast, if they're on the verge of breaking and you leave them for 12 hours they'll break, leave them another 12 and you'll likely have spores everywhere.

An update. Oh yeah 160 degrees worked wonders on these things! A slight breeze blows them now lol. Thanks everyone!

So it seems I can't yet create a new thread so I will add this in my original. I was growing Z strain and Brazilians. I had labeled them but they fell off. They began growing out of one of the cakes so I removed it and placed it in a humidity dome. Problem is they are all stem and no cap! I assumed these were some kind of pre growth flukes so I removed them but the new flush is the same thing. They look more like poorly formed oyster mushrooms.
Here's the specs
Bag was 1 pound boom from forest origins
Took several months to colonize
I had them labeled but I am not sure if this is Brazilian or Z-strain.
2 flushes so far.
Misted and aired out 4 times a day.
I have grown golden teachers in this thing so I don't think that's it.
