I never use canola oil because that is genetically modified rapeseed oil and idfw gmo foods. I wont touch anything with canola oil in it.

I use coconut oil for general cooking, sometimes olive oil. Depends what I need oil for.
I use sunflower oil for frying things.

It started as a cultivar made by a Canadian university's breeding program. Considering you live in NZ you can probably only buy organic canola as the gmo crops are banned in your country and the import of gmo food might be too

Nah bro, GMO Canola Oil 100% makes it into the products on supermarkets in New Zealand shelves...

"GMO Crops" may be banned here, but Canola Oil still makes it's way into packaged foods.

Also, Monsanto brand products make it onto NZ shelves, and the Monsanto brand products contain Canola oil and also Soy, which is another GMO.

We have Kellogg's here. Take Kellogg's for instance.

Special K cereal is a Monsanto brand product, Kellogs is Monsanto brand... They use CORN. That CORN they make cerial from (that ends up on NZ shelves) is Monsanto GMO corn...

lol I don't think there is any scarcity in Monsanto products there bod, they seem to be great at what they do in poisoning the planet and selling humans a wide array of un-natural junk food products. They have plenty of stock on shelves and ignorant humans don't give second thought in buying Monsanto brand stuff.

The shelves in supermarkets are full of Monsanto brand products, shit gave me a bad trip when I went to the shop on acid, I was dehydrated and needed a drink, going into the shop and seeing all that packaged bullshit scared the shit outta me. Not for me.

Unfortunately, if you are going to be cooking at anything above low-med heat, peanut oil is required due to the high smoke point.  It's also terrible for you, so maybe get an air fryer and just use minimum peanut oil spray to cook that way.

I rarely fry anymore but when I do, I use cow butter for superficial frying and coconut oil for thorough frying.

This is a common misconception. Olive oil has a lower smoke point than vegetable oil, but it's actually more chemically stable at high temperatures, so the only reason it should give a burning taste is if you're burning your food in it!

In general, though, it is a good idea to keep oils below their smoke points. Even if the thing about chemical instability is a wholecloth myth, oil smoke of any kind is annoying to deal with and probably not great for your lungs.

My understanding is that since the degradation of glycerol into acrolein isn't an oxidation reaction, there's no inherent reason that a smoking oil should contain any more acrolein than a non-smoking oil of the same temperature. Idk though, you probably know more about the chemistry than I do.

Absolutely agree that you shouldn't breathe in oil smoke, but I just want to emphasize that oils having low smoke points isn't the same as them being chemically unstable at high temperature. In fact, vegetable oil is probably going to produce more carcinogens at temp than olive oil even though the latter has a lower smoke point.

Yeah its basically a decomposition of oils and fats so thats not very dependent on what you have. its the part of boiling oil smoke that irritates a bit. Its a war gas. If you smell it, it is doing you lumg damage.

I find good chunk of 100% butter is best for frying onions, chicken, veg , currys etc

Ohh and i always drizzle some olive oil on my pizza :awesome:

I am not sure why so many posters say they use some kind of vegetable oils for cooking.  I thought they were bad for you?

I don't cook but back when I did, I used butter.  It was fattening but it was also flavorful.  My grandma used to make lard, which she used in her cooking.

No, coconut oil is good for you.    Coconuts grow on a tree in the tropics.
Made from a coconut tree.  Therefore it from a plant.    Therefore the plant is a vegetable.  Therefore it is vegetable oil.

If you overheat coconut oil, do not pour water into the pan.    Just rurn off the heat and remove the overheated oil from the burner, carefully.
If you can't be  this careful, then just use peanut oil.    It works great at high temperatures and fries foods well.    Also a vegetable!

Whatever oil you use, remember that frying food involves  a highly flammable substance (oil) at  a very high temperature, so when you fry, you are at high risk of burning down your house.    And you must limit the time that your fish filllet (or whatever you are frying) is exposed to this high temperature, else your meal is burned crap.

Just be cool, use a timer, watch the time your meat is frying, and make sure the time ends as soon as the meat is done.    Doesn't take long when the heat is high to turn a perfectly done piece of meat into an overly cooked dried-out piece of crap you would be ashamed to serve Grandma (and rightly so).
