That blue coloration is not due to oxidation of psilocin/psilocybin as far as i can tell. It's Probbably blue stropharia.

Can you tell us in which country you're hunting. The season may be over for them here in Serbia. There have been some frosts and it's been too dry, but maybe some will pop up again after some good rain.

Most of them was black but they started to take a white color. Also when i touch the gills they leave a black color on my finger.

I am from Serbia, so we are relatively close. I found P.Serbica on few different mountains. They are not too rare, but you have to know what exactly are you looking for, and also the weather must be appropriate. Here, the season for them is pretty much over. They are probably in Greece as well, hidden somewhere in the mountains.
About liberty cap, they are very rare here in my country. I don't know the situation in Greece, but search in cow/sheep/horse pastures with bushy grass present. Usually they are above 500m, and the peak fruiting months are October/November.
Also I strongly believe you have Panaeolus Cinctulus in Greece. It usually fruits in spring, directly on horse dung, but also on well fertilized soil. Usually in spring here where I live, when the weather is wet and warm.
Research Pluteus Salicinus and Gimnopilus Junonius. They are maybe in Greece as well, especially the latter.

This is what has been found in Greece:
Greece Gymnopilus sp. Panaeolus cinctulus Panaeolus sp. Psilocybe bohemica Psilocybe semilanceata
Edit: Panaeolus cinctulus will grow from spring to fall, it likes horse dung and is usually found after a significant rain fall or lots of dew and fog, they don't last long after the rain stops, maybe a couple days and then they stop fruiting, at least that has been my experience.
