How to cook a perfect steak?

I'm getting into all the different spices , rubs and marinades...

What I want to know is it any use pounding the steak with a wooden hammer?

don't abuse ur steak
I've only done a few steaks in my day, but you don't need to tenderize them.
first rinse it off with filtered water then blot it dry with paper towels
season both sides with salt and pepper and let it sit at room temp for 10-20 minutes if you just pulled it out of the fridge
let the pan heat up for a good 5 minutes, first
add butter and cook the steak
let the steak sit for a few minutes before you eat it or it wont retain any of its juices

technique/method is way more important than what ingredients you fuck the steak up with (kidding) (not kidding)

Juts ordered Tbone, Fillet and SIrloin steak from a very good butcher.


I eat sirloin all the time. Fillet i tried in a restaurant once. And i never tried tbone :awesome:

I'm no expert or chef..

Tenderizing is generally useful when preparing particularly tough cuts of steak, softening the fibers, making the meat easier to chew, and easier to digest. There may be some exceptions, but based on the cuts you mentioned, you shouldn't need to worry about hammering anything just yet.

Dry-aging is not the same as wet-aging. And yes, people recommend dry-aging to take your steak to the next level if you feel inclined later perhaps.

My 2c on spices: If you paid for good cuts, why not keep it simple. Salt and pepper of good quality. Apparently garlic powder/salt is a thing to try, although I haven't yet.

As for cooking; Some people sous vide (a method of cooking food, especially meat or fish, by vacuum-sealing and immersing in warm water) the steak first, then sear and eat. You can look into that if you like.

When pan frying, pay attention here as things can happen fast, steak doesn't need to be on long. Some prefer a good cast iron skillet/pan, something with good heat retention to get that perfect sear. Probably best to check out videos by chefs performing this process.

It cooks steaks really well. U have 10 options :

1 - 2 rare
3 - 4 med
5 -6 medium
7 - 8 med well down
9 - 10 well done

I go for no. 4 , makes beautiful red steaks

But hows the sear though? Does it get hot enough to produce some good colour?

One tip if there is a fat strip attached, is to allow it more time to melt/caramelize nicely. In the pan you can for example stand the steak up so just the fat edge is contacting the pan, should only take a few seconds, but prevents the flesh from over-cooking.

And never press the steak, just flip it. Preserve all juices, no pressing.

i use a cast iron griddle pan and make sure you get it very hot before you put the steak on.
the main way i do steaks is about 2 hrs before im going to cook it i'll sprinkle the steak with garlic salt and black pepper and put it in a zip lock bag with about a tablespoon of dark soy sauce and massage it all together - leave at room temp for a few hrs them cook as above.
make sure that when you chuck it on a hot griddle that the steak is at room temp and not straight out of a cold fridge.

as some said above get a good dry aged steak , if the steak looks bright red its not been aged and is likely to be tough.

Rest it for half the time you cooked.

I swear by the 3-3-2-2 or 3-3-1-1 method.

Heat your grill or a good pan to medium.
Season steak and put on heat. Wait 3 minutes flip, 3 minutes flip then 2 and 2 followed by 5 minute rest. Alternatively after the first two flips (3 minutes each) turn heat to high and do 1 minute each side.

This produces a perfect medium rare steak with a consistent pink interior from edge to edge. The reason for multiple flips is to avoid overcooking that occurs with single flip methods where you end up with an overcooked crust and an undercooked center.

It also gives enough total cook time to turn marbled fat into juicy goodness.

The way I do my steaks are, first allow the steaks to get close to room temperature especially if you are doing bone in steaks. Make a few small cuts on the meat.

Salt pepper both sides. while this is happening. Gather some hard wood with no bark. Get it going in your grill.
Place steaks in hottest part of grill sear both sides. Move steaks to indirect heat.

Place chunks of real butter on steaks cook to desired wellness. I like medium.

Gypsy boy, i too thought and was taught that as well. But basically the 3-3-2-2 is designed to start the cooking process on each side evenly instead of cook from one side and the and then the other. Then the last two produces the carmalization/browing, which is why I opt for the high 1-1

Cooking from one side half way and then the other produces a gradient of doneness, the 3-3-2-2 method achieves a more even internal cooked temperature which is better for a higher end marbled cut. The high sear and indirect attempts this but imho is harder to achieve consistently. It can be done but only it you have a very good sense as to how your grill or pan and oven cooks.
