We all wish that this worked:
But there's Loose Garlic and Tenacious Garlic, and the kind commonly sold here holds on to its skins like white on rice.
What trick do you use to peel garlic?
Me I crush the clove with the flat of my chef's knife then pick out the burst skin pieces, then chop, but there must be a better way.

Sometimes I rub them between my palms, but usually I do it the way you do.
Like this guy is doing.

I slice the stem end off then gently crush the clove with the flat of the blade. Usually easy to get the shell off and if you didn't smash too hard you can still dive the clove up decently.
I saw a crazy garlic video where the person like stabbed the middle of the clove with a knife and pulled it out entirely, not sure I believe that technique.

The smashing is good but not so much if you want a whole clove (not for mince). The other way I do it is squeeze it a bit from the bottom and the top (the pointy sides) and the skin breaks slightly, then use my fingers to peel completely (not as quick but you are left with whole garlic clove).

Place a single garlic clove, unpealed, onto a cutting board. Take a large, flat knife and hold it sideways onto the clove. Carefully press down, crushing the garlic. Depending on the clove, you should now be able to easily remove the papery skin - if everything goes right.

I hate peeling garlic so I usually just dig my fucking fingernail until I feel the soft garlic and then I just tear the shit off as fast and impatiently as I can.

Roast them and the cloves squeeze out of the skins just like toothpaste.

I chop both ends of then squash it with the side of the knife and the skin comes of really easy, then I chop it up more as necessary.

I know some people hate peeling garlic. I quite like it.. the only things I don't like are garlic smelling fingers, when the skin is too tricky to peel, and when it makes the chopping board smell even when you wash it. Potent stuff!

I made some Turkey Broth this week and threw an unpeeled head in to flavor the broth, the head was every bit as good as a roasted head, didn't give a lot of flavor the the broth though.

The shakey-in-the-jar-trick seems nice, but doesn't always work.
Try this:
Put the clove/s in a little bowl with warm water. Wait for 20-30min. Peel the clove/s without problems.
Just take care of the timing and no problem.
I used to work in a arabic/middle eastern cuisine restaurant during university, the chef there showed me the "trick" and since then i've never peeled a dry clove again.
ADVANCED GARLIC KNOWLEDGE:
When the cloves are peeled, put them in a high mortar and put lots of sea salt onto them(like one teaspoon for four standard cloves). Mortar them till they have even consistency.
I don't know why, but the dishes burst into flavor with this. Give it a try.

if the clove's skins are well dried it should come easy , i use a small cheese grater to cut the garlic , rachael ray advice

Second the garlic press. Only takes a few seconds and you extract the vast majority of usable garlic.

I put the unpeeled clove of garlic on a clean wooden cutting board. Then I press my thumb down on it. I push my thumb down, increasing pressure on the clove until the skin pops off.
