Weird oyster growth

I'm new to mushroom cultivation and am trying to grow Pink and Grey Dove Oysters.
Method: as an experiment, I pressure cooked some substrate (masters mix) in a couple mason jars and directly inoculated them using a LC syringes through a self-healing port. After full colonization (after about 2 weeks) without any obvious signs of contamination, I placed them in a small Martha greenhouse with good air circulation and a humidifier to keep RE above 90%. Temp is set to 72 deg. I left the jars in for about a week and waited for pinning.
Problem: the pinks pinned and grew really well. However, the grey oysters developed primordia and then continued to develop a large white mass, which keeps on expanding like a big scoop of whipped cream. I was expecting pins, not that!
Question: what did I do wrong? Do I need to just wait a bit more?

Thanks for the help!

Here's another close up. Maybe it's a different species? I ordered the LC from here.

Im sure youll get a fruit eventually, but mycelium just be like that sometimes. Perhaps it has something to do with how much LC you used compared to how much Masters Mix? It looks like your substrate was pretty low, maybe the mycelium decided to build itself up so that the fruits can enjoy direct contact with air outside the jar? Maybe it just wants to become self aware and eat your brain? Id stick it back in and keep letting it do its thang.

Haha, sounds like a plan. Substrate was actually right near the top I probably emptied 30ml of LC at various depths of sub. Makes me wonder whether I put too much.

Or, it's mycogone perniciosa or some other infection. I doubt you will get a mushroom from that.

Interesting...
I took a pic very soon after putting it in fruiting conditions - do these look like primordia? Because these clumps kept on expanding into the mass shown above. I guess it could be an infection
Either way, it's strange that I inoculated two jars and both did exactly the same thing, while the pinks were not affected.
