Schedule so that i have a harvest every week?

I am opening up a mushroom farm for gourmet mushrooms and want to make sure i have a consistent harvest every week. Ive been growing mushrooms for a few years now but on a very small scale. I want to make sure i have mushrooms to harvest every week so i can be reliable to chefs and at market. Does anyone have tips on how to make sure that happens? Do i just fill a shelf in the fruiting room every week?

I think thats the gist of it but im interested in what more experienced members may say..
spawn to bulk once a week and you should have a harvest once a week. For consistency you'll need to use the same spawn rate and substrate ratios as well as keep your spawn run room and fruiting room at consistent (albeit different) temperatures.

Work backwards. How many kg of which mushrooms do you need every day or week, then test how long your species take from spawning to harvest, and what your yield is. Then spawn x amount of bags, on x days before you need them. And record everything so you get to know growth and sales differences by seasons before it becomes a problem. Same for making spawn. You might want to spread it out a bit instead of once a week, that way you have a constant supply of fresh mushrooms. You also need different markets/chefs to sell to during multiple days during the week. Especially if you grow mushrooms that don't store well, but those are also your strong point as a local grower. And always over produce so you don't get into supply problems.

If you want a harvest every week you need to spawn every week. I grow oysters so I spawn my blocks On the same day of the week, I spawn my 1st blocks on Monday. I spawn my 2nd blocks on Monday the following week. On my 3rd week, I spawn my 3rd blocks and place the 1st week's blocks into my fruiting room. If I spawn on Monday I usually place blocks into fruiting on Tuesday so I don't have as much work on one day. The most important part of the whole process is having an incubation room that is kept at 72F so the blocks colonize and finish consistently.

Certainly start taking notes and records as well! If you have "a few years now" of experience,you could have notes of average colonization times,fruiting times,harvest weights..contamination loss. This,invaluable information,along with the above suggestions would help your specific grow be much more dialed in to customers needs.
Example, you may need to spawn oysters every week,but not lion's mane to meet orders. As lion's mane generally takes longer to fruit. Using the blanket method of "spawn every week" you could easily accumulate colonized bags that won't fit in your grow area.

I can grow at least 100 lbs of oysters in a room 10' x 4' x 7' (LxWxH). I also have the best humidification system on the market. I sell it as a kit for cheaper than anyone else the system just works no cleaning of the system is needed which saves you a lot of time.
