What are you using if no flow hood? Still air box?
I imagine trying to do bags in a SAB requires a good amount of finesse and good sterile techniques

I know that this is not the right answer, but no sab either, just lots of 99% alcohol, small still room and gloves

No, it doesn't evaporate as fast as you may think. I personally use maybe 3 or 4 inches of water and when im.done theres at least half left.
When your cookers are up to pressure turn down your heat so that way the rocker is barely rocking.
My.coolers have a psi meter so I turn them.down so the rocker doesn't rock but maintains 15 psi. No water lost at all.
But with 3 inches of water you can vent for 10 minutes just fine.
If youe unsure you can always put water in the pot up to the level your thinking of using, get it to a HARD boil, not just barely but a good hard boil and then set a timer for 10 minutes and see where its at

Ahhh. Well good.luck, I use a flow hood because even with a still air box I got too.much contamination.
Alcohol won't do it, the still air box and flowhood are to take care of the hundreds of thousands of spores, molds, bacteria, and all the microscopic things that are alive that are floating all around us all the time.
Its not just a matter of having your surfaces sterile the air in between your eyes and your screen right now have hundreds of microscopic living things.

For a method that doesn't use a still air box or anything you should stick to syringe injecting spores from vendors.
The venting is necessary dont get me wrong, but before i knew of the venting I used my cookers plenty without contamination, I think just from the excessive time I cook them.
