Yeah food as a chaser for hard liquor makes a lot of sense I think. A Polish guy I knew said pickled herring. Which is good stuff. The kind that's filets of herring with onions and not big cross-section chunks of fish.
Distilling vodka sounds fun, if dangerous. I wonder if these things are any good.

You need a lisence to distil even for personal consumption I beleive.
Methanol evaporates at a lower temperature than ethanol. So I think they just throw out a certain amount of the first stuff that comes out.
But honestly lets say you brew wine and distil it into brandy, if you drink the wine without distilling it you are drinking the methanol.
Its just that when its more concentrated its easier to overdose.
Im not saying methanol isn't bad but if you know what you are doing I don't think its that dangerous.
there are people who freeze distil which can boost the concentration quite a bit and the methanol is not removed using that method. You shouldnt have a lot of it obviously.

Oh yeah I realize it would not be legal. I was surprised that a commercial product like that exists and is pretty affordable though.

That still looks pretty shitty. I mean it looks nice, but probably doesn't make high proof spirits. I have a boka still that can make 95% ethanol and it's super tasty. Sweet, not like the stuff you buy in stores. I haven't used it in years because I don't drink much anymore and really only made it so that I would have high quality spirits at cheap cheap prices.
One day I might get an old barrel and use it to make a barrel of bourbon. That would be awesome to have super small batch bourbon available anytime.
If you distill wine then you would still take out the methanol. You could leave it in as long as it's mixed and diluted, but the you have a higher chance for a hangover and no one wants that. The cleaner the spirits the less chance for a hangover there is.

There’s not a significant amount of methanol produced during anaerobic fermentation
