So I'm growing Lions mane. I'm learning from different books and different people and I would like to share my method with you to hear some of your critics/thoughts about this. Also I need help for the incubation and fruiting part after spawn is mixed with bulk substrate.
I'm creating the spawn in 1 litter jars with modified lids. This contains 220 grams of colonised Rye grain that I soaked and sterilise in the PC. It took a while too look like this, I find the LM mycelium to be very translucent.
Im then preparing sawdust spawn this way in a plastic bag with 0.2 microns filter:
5 cups hard wood pellets (oak) 6 cups warm water 113 grams gypsum 1 + 1/4 cups wheat bran
PC for 2,5 hours at 15 psi and let cool overnight
I then inoculate with the entire 1 litter fully colonised lions mane jar ( #1 Could I do it with halve a jar?)
I'm not sure what to do next in terms of: (#2 Should I try to remove as much air as possible from the bag for the incubation part? - I heard LM would like to fruit all the time, so keeping not so much air in the bag would help to reduce that)
(#3 I also heard the LM would most likely start fruiting before the entire bag is fully colonised, is that true? and if so when should I open the fruiting hole?

lions mane has very whispy growth, yes. you can inoculate one bag with the hole jar but it's not necessary. one quart jar can inoculate 3-6 bags, if you have time. you should leave the headspace in the bag, don't push out the air. when it's time to fruit, just roll up the top of the bag and tighten it around the block. then make a slit and expose to fruiting conditions.

Much easier to use masters mix (50/50) by weight soy hulls and hardwood fuel pellets.
As far as the water you need to test it to make sure you are at 60% the wrong water content is the main reason grows fail. Use the microwave method to test your water content. Check my signature for how to do the water content.
Use reclosable cable ties to seal your bags they are faster and easier then an impulse sealer. Rolling the bag up or folding it over will cause fruits in the bag which will not form properly so you are wasting energy. Anywhere fresh air reaches the sub you will get fruits. So don't take the chance. The ties are awesome you will find many uses and they can be put in the PC without a problem...

Lion's Mane is obsessed with water, due to the largeness of its fruits
Just letting you know.
It's not too difficult to cultivate though.
Edit: just clarification they need to be misted a lot

I don't find that to be the case. Maybe before they pin, but most avoid misting once they pin as they can abort. The fruits continue to grow pretty well without much moisture, in the wild and cultivation.

Water on the fruits will cause brown patches of death on them. Aviod any water directly applied to the mushroom.
