Tempeh and contamination risks.
    #27054947 - 11/24/20 05:22 AM (3 years, 2 months ago)

I would like to start experimenting with making tempeh at home. My plan is to wrap the cooked beans mixed with the starter (Rhizopus Oligosporus) in banana/cabbage leaves and leave it in my incubator for 24-ish hours at the recommended temperature.

I am a bit scared that my incubator will end up full with spores that will cause contamination in future grows.

Would it suffice to wipe the full incubator with alcohol once the tempeh is done and let it dry to avoid future contamination issues?

Maybe I am being too paranoid but I have seen how fast and aggressively the Rhizopus grow ...

if you're going to use the incubator only for tempeh, i don't see the issue?
don't use leaves, but ziplocks.
you can buy non-sporulating strains as a starter if you're really worried about the spores.
In my grows, I only got a bit of sporulation around the needle holes.
if you freeze after 48 hours, you should be fine.

I plan to use the incubator for more species hence my concern.

I was thinking using leaves as to avoid unnecesary plastic but I guess I could reuse the ziplocks...

you can be damn sure that if it sporulates in the incubator, you have a high chance of cross contamination.
I speak from experience.
don't reuse the ziplocks. I make my tempeh in blocks of 1 kg. that's 2-3 months worth of tempeh in one ziplock.
If you want to reuse stuff, buy a 1 cm deep stainless steel oven tray and make it in that. cover with perforated glad wrap.
