Shoebox variability and condensation

Looking for and consensus as to whether this is the norm for shoeboxes...each vessel seems to vary greatly, even under the identical conditions and substrates.
Issues:
-Entire spectrum of surface level conditions from bone dry to overly wet puffy mycelium just around the 6 day mark usually.
-Condensation that builds up over the span of the spawn run and knotting phase, eventually running down the smaller side and sitting along the very edge of the substrate.
Things I did to try and combat these issues:
I changed my shelving setup so there is no stacking of totes since that seemed to create worse conditions in any but the top...this has not seemed to make a difference though lol.
-I Moved all shelves away from exterior walls that have a temperature flux.
-Sealed windows with plastic to keep a more steady temperature in the room
I usually end up looking at each substrate and misting if needed and also tapping off all the accumulated pooling water from the condensation and sometimes even the lid has enough to drip back down on the substrate.
This becomes frustrating when dealing with 50-100 minis 
Anyone have methods to add consistency to this process? lol
Thinking about going back to monos and making them all Pasty's ezDialed monos
Probably my fault for underestimating the maintenance level of these little guys

Munch's method

Alright, I am giving Munch's method a shot. Only 2 a tub is gonna be kinda tough.
I am also currently spawning oats for the first time so I psuedo cased half with coir like he says and half no fake casing.
Casing seems to be making a big difference...I use to use this method with casing and spraying the top before lidding...dunno why I stopped.. pins coming in are looking good on some earlier ones
