Oysters, grey if you live somewhere cooler, pink if it's generally warmer where you are.
It's a bit different to growing cubes though if you want to get a good yield. However, the techniques used are all relevant so you will learning stuff that will help you growing cubes (if that's your goal at all).
I'm certain you can start oysters on BRF cakes, but to get better fruit you'll probably want to break the colonised cakes up and spawn them to a bulk substrate. Plain straw works well and is easy to work with.
The whole process can be done without a pressure cooker.
The slight catch maybe that it's, at least IME, easier to buy gourmets as already colonised grain spawn and not spore syringes. Seeing as you can legally trade live gourmet myc there's no real point in selling them as spore syringes.
This has some advantages and disadvantages. Buying the spawn from a reputable dealer (I use mushroombox in the UK, their spawn is cheap and has served me well) means you have a clean culture to start you grows from. However, you won't be learning much about making a sterile germinating medium.
If you were up for it you can then start with agar and grains. But this requires a bigger investment in equipment as you need a pressure cooker, plates, etc.
All of this is rubbish if you can easily find an oyster syringe. You could get some liquid culture which would speed the process up as you wouldn't need to wait for the spore to germinate once you've inoculated your PF jars.

Whats the best way to grow the grey oyster? Was watching some vids on youtube, seem to use a bucket with holes and layer substrate and spawn.

What's your main objective? To grow a big harvest of oysters, or use the species as a no-risk of testing out a tek that will grow cubes?

Lions mane or oyster.
You’ll need hardwood fuel pellets from the bbq aisle though.
A lot of people do pf tek type cakes with them and then just sit the jar on its side and let the lions mane grow out the top.

I would like to grow the oysters to eat, so max harvest would be best. Not really a trial run for the cubes, as will prob be doing both at once. Cubes using pf tek and either a shoebox later or sgfc.

Seconding the Reishi, I've read here that it's pretty forgiving too.

I’ve had some good success with blue oysters, and have been able to use them to improve some of my techniques that are also useful to cubes. I got a fruiting block and cloned to agar with the first flush. Had to do some transfers to deal with contamination. Prepared grain (rye berries), inoculated with agar, and spawned to 5 gal buckets using alder chips.
All in all, it’s been a great experience both for the experience, and the tasty mushrooms. Highly recommended.

Thanks....sounds exciting. Thinking of using straw or hay for the substrate and use a bucket with holes. Will prob get some grain spawn for first try.

Which mushroom grows exactly in the same environment and has same requirements as cubes? i.e. monotubs

Buckets or bags work well for straw. Straw is the substrate and can be supplemented with hay...like 20% by dry weight. You’ll then need to chop and pasteurize it which is a pain in the ass and fruit in an area with high FAE and rh. Here are a couple oyster grows I did on straw bags this way.

Check Buckeye Oysters grows for more in-depth info. https://www.shroomery.org/forums/showflat.php/Number/13466256/fpart/1/vc/1

If it’s pine, no. If it’s aspen, maybe. Pleurotus populinus grows on aspen but other species will prefer other hardwoods. Hardwood Fuel Pellets, as mentioned, are typically preferred, though look for the fuel type as opposed to smoking type as they will be cheaper. It helps to supplement them as well with things like bran or soy hulls. Supplemented HFP substrate must be sterilized; As such, it would be hard to run in buckets. Unsupplemented sawdust/shavings/HFP can be “pasteurized” and used in buckets but returns will be lower or require more spawn. See Lipa TEK.

I got aspen shavings and fiber from my local farm shop, they do pet bedding and such. I think aspen is commonly used in reptile bedding?

It is. I’d say aspen could be used but wouldn’t be ideal/very good. Hardwood furniture/cabinet makers will almost pay you to haul off their sawdust/shavings, so if you have one near you that’s the best source for certain.
