Psilocybe Cyanescens advise

hello, I have 6 grain jars inoculated w Psilocybe Cyanescens, all of which are well over half way colonized, i realized my error in timing, but not quite sure where to take them from here, as I live in the north east and its getting to cold to start an outdoor bed, and I'm not going to attempt an indoor grow. I was thinking transferring to saw dust bags, but here is where I am in need of advise, would this be to long of a period to be sitting in bags until spring? would keeping them in colder conditions maybe slow the growth rate to get them to the spring time? still fairly new at this and definitely jumped the gun getting cyans, but mycelium looks happy and healthy, any advise is appreciated, thanks

I have grown the species on sterilized woodchips and kept it in the bags for months; then emptied the bags into a big tote and kept them in there for months. When I finally got off my ass and made my patch in march, I had mushrooms in october.

If they fully colonize the material. Mix it with more. The more spawn you have in the spring the more likely you are to get a fruiting in the fall. Ive tried to make bigger patches with less spawn and the mycelium didn't consolidate enough by fall to fruit the first year. The second year was exceptionally good though
