Whats wrong with my mini monotub? Tons of side pins, zero on top :(

I mixed colonized grains/cut up BRF cakes with pasteurized coco coir - one small layer at the bottom, then a middle layer with 50/50 combo of colonized substrate and coir, then a small thin coir casing layer on top.
SO far, all the tupper wares are growing white mycellium on the sides and bottom. Some have suspiciously fast growing white mycellium-looking layer on the top. One has pinning on the sides.
Am I doing something wrong? Am I supposed to flip the little guys? I dont get how there is zero pinning on the top but tons of pins on the sides. Such a damn tease.

pins form where the conditions are the best for them to grow, meaning your surface conditions arent as good as the microclimate created by the sides of the container

Well thats useful info! Too bad I'm too stupid to know what to do with that.
Can I just pop this brick out of the tupper ware and throw it into a SGFC or similar kind of humidified environment?
Or will pins eventually form on top? As of now, there is a tiny little group of 3 pins sprouting from the top. The rest just have white looking mycellium covering the coir casing layer, which I am unsure whether its a good or bad thing.

Would really need to inspect your container more closely to feel good about giving a solid answer. Your container's tapered, so plopping it out into a SGFC or similar should be pretty straightforward, should you decide to. You'd want to keep the humidity pretty high after changing up its environment like that. G'luck.
Seems that I could use a refresher on this myself (this is a mono sub, flipped):

Although in my case, genes seem to play an annoyingly disproportionate role. Only a handful of tubs did this, all the same genetics, out of a far larger total number of tubs with all other factors the same.

check your surface humidity. also, I believe you need to increase your fae. those surgical tapes on top do not allow much air to flow, they are used for gas exchange but not really helpful for fae. you want the mycelium to breathe during fruiting. if your sub is colonized put it to fruiting, open a little hole on top with some loose poly and 4 2 little holes around with some tight poly. run a fan too but not directly blowing on the tub.
