Is 2 week old pasteurized coir, manure, and straw still good to inoculate with spawn bags?
They where kept in a cold room, gusseting still folded over.

I would say re pasteurize and use if it wassnt for the straw. Im my expirence straw contams much easier and usually 2 weeks or less is about the window you have for it to be colonized before it molds.
That being said I have never tried re pasteurizeing straw so I don't really know what would happen. I personally wouldnt, my gut feeling just says no.
Maybe if theres no other options or nothing left to loose just give it a go and see what happens.

you should be fine with 2 week sub it's not ideal but will work. as long as the water content is good no need to re pasteurize.

I only use 80/20 coir vermiculite pasteurized ...I’ve used stuff that I pasteurized almost 6 months ago and it’s absolutely fantastic
I’ve heard the reason this works so well is because when you pasteurize it it kills all the bad Trich And leaves the good enzymes in it, well if you leave it wet in a sealed container the good enzymes reproduce quickly and take over the whole substrate so it’s extremely hard for anything to contaminate it
I do all my stuff in an igloo portable cooler
