Are the plates stored at a steady temperature? Temp swings are no good for plates and will cause the condensation seen in these pictures.
It's hard to tell what's going on in those pictures but there might be some healthy mycelium in there. Two days is incredibly fast in my experience.
When making your first transfer, always take a small piece about the size of a grain of rice and move that to a new plate.
I usually let my plates solidify for 30-45 minutes minimum but i'm sure 30 minutes is sufficient.
I pour around 122f.

I don't have central heat and air unfortunately so temps have been fluctuating between 67F and 71F. Perhaps I should get an insulated cooler to keep them in? Would that help?

Sounds like your temp is fine. Looks like condensation from pouring the agar while it was too hot.

Two days is definitely fast ime. Hard to tell whether it is healthy growth or contam from the photos but if you do see mycelium maybe grab some and do a transfer to a clean(er) plate. As for your condensation issue I'm in the same boat and even though I have dropped my pour temperature down to 115f I still have a lot of condensation. I'm actually waiting on another media bottle to cool right now so I can try a pour at around 110f.

I usually have hardened agar in the bottom of my media bottle if I pour below 117f.
I pour 40 plates at a time minimum with two 500ml bottles and the second bottle always has some hardened agar at the bottom. I can pour a 20 stack in about 60 seconds or less, so it solidifies really quick at that temp in my experience.
Condensation usually goes away after I keep the dishes in a stack for a day. You could put a metal cup with a flat bottom filled with warm water on top of a dish to clear it.

Yeah, just a little over 120 has been the sweet spot for me. I started out at 140 then 130 and my plates looked foggy as shit like OP's.
