Ketchup is my all-time favorite. U can use it on almost anything.
Then for Japanese/Chinese dishes, I like to use Kikkoman Shoyu or Sweet and Sour Sauce.
And for Thai dishes, I love Thai Sweet Chilli Sauce Mae Ploy.

I dont like very hot sauce, I kinda like Franks stinging hot honey garlic cause its the perfect heat for me, but it dosnt go well with everything, plain old tobasco sauce I can sometime like, but other times I think its too hot, I really like presidents choice chipotle sauce, but its barly even hot, it just has a good flavour, I like pickled jalopenos, but fresh ones are way too hot for me

Im the same way. I like a little spicy but not like deathly-hot sauces. For example, Cholula is a nice mild hot sauce, one of my favorites for Mexican dishes.

Sriracha is good enough for me. Those insanity sauces are for people with tolerances I do not want to get.
Too much pepper is bad for you too.
Huy Fong sriracha does it for me, a nice rich squirt and I'm good.

Daves insanity is some of the worst sauces in the wold.. any sauce that uses extract tastes like battery acid and are just novelty sauces. I make hobby sauces and interact with a lot of people in the sauce industry, some really good stuff out there. Check out lucky dog hot sauce. Pink and black labels are my jam.
Made a good cucumber dill aioli to go with smash burgers today, though the star was the maple bacon jam
