Shiitake restaurant prices?

What do you guys price your shiitakes at when you're selling to restaurants?

A local restaurant has approached me and told me their distributer is selling them shiitake for $10/lb, but they would prefer to buy locally. I'm wondering if I should ask for more or just match the price from the distributer.

$10/lb sounds not bad, what kind of volume?

what would you price them at a market?

You really should do a cost basis to determine the price imo. How much it costs to grow 1 pound, and how much you think you deserve for the hours you put into it. I think a 50% profit margin is reasonable in this case.

Say you spend 10 hours to grow 20 pounds. You spend $2.50 for each bag that produces 2 pounds of mushrooms. (numbers just for simplicity) You pay yourself $15 an hour.  So you got 10 bags that cost $25 and 10 hours of work that cost $150 for a total of $175 to make 20 pounds. At a 50% profit margin you need to get $262.50 for 20 pounds of shiitake so it would be $13.12 per pound. The hourly wages, profit margin, and actual cost per bag is not going to be those amounts, but if you think of it like this, (you working for your business) you are making your company money rather than you making you money. You just gotta figure out if you can be happy with the margins at that price. I mean you could just pay yourself minimum wage and use the revenue to expand for a couple years.

Really, you gotta figure out what it is worth to you to do it.

Thanks guys, I ended up giving agreeing to $10/lb. I don't have a ton of volume, but the restaurant is owned by a friend and I'm still making a good profit. Thanks for that breakdown teknix, I think that's definitely the best way of determining price.
