Way too wet.
Despite looking wet, i just harvest them and the sub was very dry..
How can i know for sure if its excess of moisture or lack of?

Idk that’s a weird one. The caps are enormous and the coir seems pretty dry.
Usually over hydrated ones have dark flash and small lumpy caps right?

Those four 86qt monotubs I was using bacillus thuringiensis israelensis bacteria on are knotting and pinning like gangbusters now. The ones that had the white blobs growing on the mycelium.

PE6 but it's albino now I guess.

 More pins.

I know using BTI on these tubs was the nuclear option but they seem healthy for the most part and smell mushroomiffic.

Generally. Now that I view this on the tablet I can see the coir does look dry on top, but the top layer can dry out pretty quickly. Some of them are quite dark and stumpy (all are short statured) so the sub could have been too wet to begin with then just dried out on top. Doesn't look like it pulled away from the sides all that much really so that would make sense. Hard to tell. Could have just been bacterial but when I have bacterial boxes and good conditions I still get big/tall fruits (depending on genetics) but stumpy fruits are almost always from hydration issues. Especially sporeless and stumpy both. Here's an example of too wet but not dark or really wavy or anything:

Could just be genetics though. Hard to tell. I have had Classics that started too wet that grew stumpy and still had bi, wide caps. Never know...

Does anyone here use a sous vide for pasteurizing? It seems like a no brainer but every time I've tried it fucks up... 155f for over an hour... in a gallon bag appox 1 inch thick... how is that not pasteurized???
This was the fastest and best looking PE bag I've had to date... super fast (for PE) and clean from plate to jar to bag... fully colonized the box in 5 days, then cased... casing is just peat moss hydrated to field capacity... wtf am I doing wrong???
Your core temp probably didn't get to 155 until close to your one hour mark...
Even when its flattened out? The whole thing was less than an inch thick...
I pasteurize sous vide 60C for 90 minutes and I vacuum seal the bags. Works great for me. Coir field capacity 1% lime d.b.

Are you putting it in and taking it out in an hour? The casing needs to reach 155 completely then maintain for an hour to achieve pasteurization.
I do sous vide casing in jars and stick a thermometer into the center from the top to make sure I hit the right temp throughout. You could also just sous vide 1.5 or 2 hours to make sure you get there.

Even if you shook the jug the dmt would still be in solution. It's not like you shake it and the alkaloids disappear. Wait for it to stratify again and pull off the solvent layer. DMT extraction is hard to fuck up
