Homemade Ginger Ale - Burping Question [Recipe Included]

So I've been making my own ginger ale with active dry yeast as the source of carbonation.

After day 2-3 the bottle gets REALLY firm every few hours and has to be burped.  When I do, it starts to overflow and I have to close it again.  This would be fine but I don't want it to explode and I want it to keep fermenting.

My issue is that when I refrigerate it, it seems to lose carbonation really fast and goes flat within a day or two.  What gives?  I'm hoping that I'm just burping it too much and underestimating the pressure a plastic 2 liter bottle can actually hold.  Here's the recipe I use:

Simple Ginger Syrup
  • 2 Tbsp finely grated ginger
  • 1 cup sugar (I use Sugar in the Raw Turbinado)
  • 1/2 cup filtered water
Ginger Ale Solution
  • 2-4 Tbsp freshly squeezed lemon juice
  • 1/8 tsp Active Dry Yeast
  • 7 cups filtered water
  • Simple Ginger Syrup we just made
Tools
  • fine mesh strainer
  • a pot with a tight lid
  • a funnel
  • a bowl
  • empty [CLEAN] 2 liter bottle with lid
Directions

1) Pour sugar, grated ginger, and 1/2 cup of water into a pot and heat on med until the sugar has dissolved for a bit.  Keep the heat low, do not simmer or burn the syrup.  Let steep, covered, for an hour.

2)Put the funnel into the bottle and dump in the yeast, followed by the syrup.  Once the liquid all strains out, use the back of a spoon to press the ginger pulp and expel any remaining liquid it's holding.  Get all of that ginger goodness out.  Set the mashed pulp aside and refrigerate. (It's ginger as fuck but it's basically ginger candy and it's delicious! :awesome:)  Squeeze the lemon juice into a bowl.  I use 2 med/large lemon's worth.  Pour through strainer to catch any seed and pulp, then dump the rest of the water in.  Screw the cap on tight and give it a shake it like it owed you money.

3)Leave out of direct sunlight at room temperature for 3+ days.  Be careful later day 2 and 3, it will need to be burped before it explodes!  Taste it around this time and when you're done letting it ferment pop it in the fridge to slow it down.  It will still ferment but very slowly, so keep an eye on it for firmness.  Although it probably won't last more than a few days before you drink it all. :lol:

I'll make a pictorial when I do it again.  But back to my main question lol how do I get it more carbonated and not have it go flat so fast?

get a bottle capper and some caps and some returnable beer bottles and put some caps on it.

I don't know what the timing would be, how long you would have to let it brew before you capped it.

I have a capper like this, bottle capper, that I used for mostly wine, bottling small bottles, but have done a few batches of beer with.

If you do it this way make sure you use returnable bottles, they are thicker and not likely to explode.


Or get a carbonator of some sort.

I've made a couple batches of Tepeche recently, a fermented drink made with pineapple scraps, brown sugar and spices. I put some ginger in the last batch and it was better than the first. I start it in a half gallon jar with a fermentation lock and after it's fermented some, there is yeast on the outside of pineapple that gets it started. It gets moved to a plastic bottle. It keeps fermenting in the bottle and is well carbonated and stays that way after it is opened and some is drunk and close until about the fourth day in the plastic bottle and then it runs out of steam and is only slightly carbonated.

When you refridgerate ginger ale after burping it you are also slowing down the growth of the yeast, as it gets cooler yeast grows slower, so you'll have less carbonation. The timing you are going to want to get is when to bottle so there is enough sugar to get some carbonation in the capped bottles.

Is it normal to ferment ginger ale under pressure like that? One thing you can consider is pasteurization to kill the yeast and stop the fermentation /carbonation. Once ts fermented to your liking cap for several hours or overnight then heat the bottles in a water bath for a while to kill the yeast. Obviously you would want to transfer from your fermentation vessel to flip top or crowned bottles before heating.

That's an idea I was tossing around.  It just seems easier to manage but I quite like the novelty of having the yeast do it.  I think I can get a Soda Stream on the cheap, however, and combined with a bottler might make it a more sustainable hobby.

Oh wow I just put the rest of the pulp in my dehydrator... It turned into awesome ginger candy!  I just made a batch with raspberries too, I can't wait to try it out. It's almost like a fruit roll up!

I'm glad I thought of this instead of just chucking the leftover.

Here's the finished product. Awesome little fruit snacks I made in the dehydrator just using the leftover pulp. It's delicious. Not to sweet at all. And the ginger gives it a nice little kick. The red one is ginger and raspberry.

brewing + carbonation is all about sugar control , use less and you will get less CO2 , you can give yourself some leaway by using 2ltr plastic pop bottles and only filling 1/2 to 2/3 full , when you fill them up leave the top off and squeeze the bottle till the mixture hits the neck then screw the top on - this gives you more room for pressure buildup.

Oh I like that idea. I'll need to adjust the recipe to fill less in each bottle but that sounds like it'll accomplish what I want.

Get an airlock. That should.deal.with your over pressurization.

Yeah I'm gonna get some carboys and airlocks because I'd like to make my own wine again.  I dabbled in the past but I figured it's better than just 2 liter bottles.  :shrug:

fitting an airlock wont work for ginger ale (you want carbonation) - unless of course you want to ferment it flat then use a soda stream or similar device to carbonate it.

*to a certain degree you can also slow it down by putting it in a cold place but getting the sugar balance right is the main key.

Yeah the soda stream sounds like a better option for my purposes.  Experimenting with wine from different fruit juces is fun though.  And my friends used to dig it. I'll probably do both.

I've heard you can reuse storebought kombucha bottles (like G.T. brand) as fermentation vessels. They have thicc glass and a special cap to deal with the pressure build up.
