Noob question about surface conditions

Newly anointed but EXCITED lurker with a question about SURFACE CONDITIONS.
After reading that one post about beads of moisture on the surface. And I kind of get it but not reaalllly...
My question is: Once I have pins turning into adult fruits in a sterilite tub, do I need to keep having those little beads throughout the sub? I think my fruits need to breath more!! What is the point of keeping those conditions if most of the pins are already in??? AM I missing something? Will the pins that are already in die if the myc gets too dry on top?

In the big picture, you have to understand that mushrooms grow through expanding cells with water, not adding cells through division like plants do. It order for that to happen, there has to be available water in the substrate to push into the fruits to make them grow. We maintain surface conditions and humidity to keep the water we originally put in the substrate available. So during fruiting, I think we want to maintain humidity, by having a touch, but not a lot, of water beads around to keep things moist. During fruiting, I spray more on the sides of the tub.

i give my tubs more FAE when i start to see pins and i keep increasing the FAE slightly everyday until they are fully mature. mushrooms don't have skin like we do so they'll dry out if you give them too much FAE. because of that, they somewhat provide their own humidity if there are enough fruits in the tub.
once you see pins, you want as much FAE as you can give them without drying out. it's tricky to find that balance point, so aiming for beads of moisture on the surface is a good safe place to start. but i personally run my tubs with so much FAE i never see beads of moisture on the surface at all. (ok maybe i'll have a few specks of moisture in the valleys). to do that successfully without drying out your tub, first it helps to use a casing layer. and second, it helps to be very familiar with your grow room. most people don't give enough FAE so if you think they need more FAE, you're probably right. just be careful not to dry it out.
