Oak will work fine. I would go with the finer material, but that's just my preference.

Out of those two, you would want the finer of the two. But why not just buy Hardwood fuel pellets? They should cost you like $6 for a 40 lb bag. If you can find soyhulls do a 50/50 by weight with the Hardwood fuel pellets and you will have the best sub.

Those should work, kind of expensive. Maybe check around local. Being in Germany I would think you could find cheaper.

Once you find the pellets use this to get the proper water content every time...

Don't buy the Räucherspäne. They are for smoking meat or fish. They are not compressed. When you add water to the Holzpellets 15 kg will be way more than 60 liters Sawdust or chips. Oysters and king oysters will be growing well on Eiche (oak).

Birch should work fine, Ive picked them off birch in the wild. Though its not nearly as common as other hard woods. That may be an indicating factor that some oysters will only colonize birch as a last resort though. Where are you located? A farm supply store should be able to get you 40lb bags of hardwood fuel pellets for under 10$.

Hardwood fuel pellets are ideal, small particulate size, low cost.

I have not used birch personally, I've used a hardwood fuel pellet blend which I think was primarily oak. I don't know what kind of success you will have with birch but I guess it doesn't hurt to try. Let us know what your results are.

I'm seeing a lot of wild Oysters growing on dying sugar maple trees in my area. Shit tastes better than comm varieties I grow on blocks made from pellets. I chipped up some limbs and plan to give it a go with some spawn to see if there is a difference or what. May also try to clone the next wild one I find to see how it works on the blocks. So much to learn still!

You might be overthinking it a bit, you could buy one of each and then see which it grows off of better. The ones labeled "hardwood" that I get is an assortment of hardwoods, but I honestly wouldn't mind having a bag of pure wood as well, and for only a couple dollars more. "Hardwood" is just going to be compressed sawdust from whatever the local sawmill was cutting up, so it isn't going to be as controlled as pure oak would be. But they should both work fine.

Most species of hardwood would be fine for growing these mushroom species. Get some and try it out - if it doesn't work try again. You will learn far more by trail and error than anything else in my opinion. I would never downplay gaining knowledge beforehand, but there is a point when you should just go for it and see how it turns out. I wish you the best of luck.
