Are you positive it is mold? Pics would help.

Cakes made from spores are often harboring other organisms. If you want to do cakes to bulk, a better bet is to leave them whole and just sandwich them in between some CVG. Put about an inch in the bottom and pack it in between the gaps between the cakes. Put the cakes in just like the jars sat in the case (touching). Cover the top with a half inch of cvg and initiate fruiting immedeatly.

Breaking cakes up will "work" but if there are nasties you'll spread those around too rather than infections remaining localized and the mycelium being able to stop the spread.

Just lay them in and case it.

I like fruiting cakes as cakes. My last cakes flushed 4 times before they stopped producing and then finally one or two mold out. Cakes are contam resistant for a while and you dont have that assurance when spawning them to bulk imo.

Coir not only can get moldy but sometimes has trichoderma already loaded into it. Make sure you know what you're using.
