Would a substrate of 1 brick coir, 2 quarts verm, and 5 quarts water be enough substrate for 3 pounds of colonized grain spawn?

this is why we use measurements of volume for spawn. no clue how much 3 lbs is, I've literally never weighed my spawn :shrug:

I would say use 4 qts or round about 4 lbs for a good ratio. but this is dependant upon the actual size of the monotub.

Protip: weigh your jars, this way you can find out the weight of your grain.

Ive started to put paper notes on my tubs that tell me how much grain spawn was used, to give me information about how the new oats I am colonizing, will produce fruits compared to the old corn.

I am using a pre made injection port bag that I knew was 3 pounds. In the future I will be making my own jars. This is my second grow. My first grow I used northspore and bought their grain bag and boomr bag (poo+coir+whatever else they use) substrate. This time I am making my own Coir+verm substrate

In my limited experience I believe that would give you more than enough substrate.  For reference I recently used a very similar amount to spawn 5 shoeboxes using 5 close-to-full quart jars and had enough left over to do a 6th.  Good thing is if you roll with that amount, even if you have left overs, you’ll have a point of reference for future grows at a nominal cost.

3 lbs. of grain is equal to about 3 1/3 qts. Each myco qt weighs about 400g. That standard coir recipe that you posted in the op is good for about 5 myco qts. You're are going to want to cut back the recipe some. You want a ratio of 1:2 spawn to substrate. You could use what's left of the coir/verm as a casing.
