Pre PC WBS Moisture Content and Softness

I know, I know... a lot of y'all are like.. "yet another question about this", but I would really appreciate the help. I cannot find a direct answer to my question.

Nearing the 48 hour mark on this soak. Some seeds are soft and some are hard. Some I can squish with effort and others I cannot. Also, the water is getting that familiar fermentation smell. I've already changed the soak water once or twice just to be safe. My home is on the cooler side and the soak water temp has been moderately hot when filling my buckets, at best.
How do they look? Should I assume softness of harder seeds will increase after PC'ing? I've seen no bursts grains at this point.
Also, I added gypsum to initial soak water, not thinking about the water changes to come. Having changed the water twice, should I add gypsum again before PC'ing?

They really dont need to be soaked that long. I would guess at this point the grains will explode into a starchy mess when you PC them.
I soak for 20-24hrs with cold tap water only and even then can have a jar or two that comes out a little clumpy. You dont want the wbs to be soft before you cook it. My way of physically testing it for readiness is I bite a piece of milo (I believe it is called) and if the skin on it is slightly soft but the inside is pretty tough it is ready to be cooked
But you dont need to do that to test it. Just soak it for 20-24 hours.

yeah dont over think it. Soak them for 1-24 hrs and you are fine

Less is more when it comes to grain moisture. If they're too wet, colonization is slowed. I like to do a boil after the soak, and then toss in the strainer until they steam off excess moisture. You want them nearly dry before loading into jars for the sterilizer.

Anywho, I was following "Franks 12" because it's what I'm familiar with. I've had great success with it, but that was years ago... so I'm rusty. I'm also going more "bulky" this time around, which can present different challenges.

https://mycotopia.net/topic/5852-docs-wild-bird-seed-tek/ This lab follows what RR just said. Its what I use. A 12 hour soak has worked fine for me but if I boil too long the grains turn out like that which usually means there is too much water in them or they exploded or are going to in the pc
