Yellow discoloration at base of stem / identifying contamination on later flushes?

After dunking and rehydrating, I'm still getting mushrooms for a 4th-ish flush on my monotub (I've lost count at this point; I began selectively harvesting fruits so all the "flushes" have blurred together)
This particular fruit, although massive and apparently super healthy, developed a yellow discoloration at the base of its stem. Should this be tossed, or is it still edible? Pictures below; one with flash, one without. It would be dried before consumption.

 Although the pictures make it appear more brown than yellow, it looks distinctly more yellow in-person.
Also - I'm struggling to identify contamination on my substrate, as there's so many different colors present due to it being an old block which has given out many flushes. It's still pumping out mushrooms - do I just keep harvesting until it stops? Pictures below - again one with flash, one without.

 Some notes: in general, but especially when harvesting my first flush, I left accidently left quite tall stumps. The green/blue spots are stumps from early flushes that heavily bruised when cut, the tan stumps are from later flushes that didn't bruise much when cut. Also to note; I accidently let the block dry out, so much of the mycelium also turned a tan-ish color due to this. I treat my blocks with hydrogen peroxide occasionally, so besides the smell of that, the substrate doesn't really smell like anything at all.
Does this block still look good? Obviously it's old and beat up - but is it contaminated? When do I stop harvesting and throw it out?

To add more info, I harvested the fruitbody in question about an hour ago, and the yellow part of the stem bruised blue when I rubbed my finger on it. Seems to be mycelium that just discolored for whatever reason - maybe due to bacteria? Regardless, I'm assuming once it's dried it will be safe to consume, right?
