Fried chicken of the woods help

Found my first young chickens today. I’ve heard they’re really good fried but I figured ask if there’s a best way to go about it. Egg wash and flour or flour, egg wash, then flour? Or would a homemade batter be better?

I fill a Ziploc with flour, salt, pepper and chili powder then shake. Dunk in egg mixture. Then fill another bag with panko bread crumbs and shake. I'll put them on a baking sheet in the freezer. Fill a stainless steel stock pot with peanut oil on my outdoor propane grill, burner side. Use a candy thermometer to get oil to 300F. Anything hotter they will get dark, not golden brown. Remove after a few minutes and sprinkle with salt. Sometimes I coat with buffalo sauce.

Usually soak them in salt water for 5-10 before breading as well.

No peanut oil or panko on deck at the moment unfortunately. You think vegetable oil and blended stuffing mix would substitute in okay?

Probably, peanut oil is what gives the crunch. Stuffing mix will give a Turkey day flavor.

I hope so lol. The ones I’ve got are lighter and more yellow than the vibrant orange ones I see some people post. From what I’ve heard these tend to be more tender than the orange ones but with less flavor

I had some beers but generally tree chickens are white underneath, ground chickens are yellow. Both can be bleached from the sun but ground chickens are tastiest.

These came from a dead stump, they’re still kinda yellow but just barely. I just finished cleaning em so I’m pretty excited to see how they taste lol
