shiitake 3790 question

Really struggling to get shiitake 3790 to pin/fruit. Colonization & browning appear to proceed as normal (ie. fully white after ~5 weeks, 100% brown ~2-3 months)
I've been implementing the usual triggers prior to entering fruiting conditions: 1) cold shock(~24 hr @ ~ 40 F (3 C)) 2) slappy slap 3) cool H2O rinse 1-2/day upon bag removal and entering fruiting chamber 4) RH @ 85-95% 5) CO2 @ ~700 ppm 6) ~1000 lux light
The substrate formula fluctuates, as I've been experimenting, but usually includes some or all: ~20% coir, 40% wood pellet, ~5% straw, 15-25% soy hull, ~5% gypsum, 5% vermiculite, ~5% bran 0.2 micron medium size bags.
As an aside, I've been growing shiitake S75 the last few years without this type of issue. If anything avoiding early bag pins is the problem. I know S75 isn't the greatest, I'm getting roughly 60-70% BE off of 3 flushes. Was wanting to try other varieties and had high hopes for 3790.
Any shiitake growers with advice or opinions? I'm not sure how closely 3782 is related to 3790 or if tips for 3782 would apply to 3790.

That's odd, I wish I could help. I don't keep records but I worked with 3782 a while back and didn't have any problems at all. Like you said it was mostly trying to keep them from pinning early before I wanted them to.
The only thing I can think of is try a different cold shock, over several days. Like into the 40's or 50's at night, back up to room temp during day, 40's at night again, for like 3 nights. Better simulation of nature. Sometimes it takes more than a solid 24hr dip (which isn't really nature-like at all).

thanks for chiming in guys.
It's a LC from grow mush canada. Should also mention fruiting temps are ~68F (20C) and lighting is 24hr. Also, following one round with these failed 3790s, I did manage to get a VERY pathetic flush from 2 of 8 blocks after drying, resting, soaking (5hr). It was maybe 20g (2 small fruits).
I'll give the cold shock cycle a try forrester. The current outdoor temps are ideal for that. Got a couple dozen more 3790 bags in the queue, so it'd be nice to figure something out.
[Re cold shocks: After doing side by side comparisons of cold shock vs. no CS. I observed S75 doesn't really need one. Which simplifies things, especially in the summer.]
Have 4 other shiitake varieties on grain or sub right now, including 3782. All colonizing well so far. Hopefully the results are better.

I can see a few things I would change.
I think you're supplementing way too much. normally gourmet blocks are supplemented up to 10%. I would ditch the coir and the hulls. use only sawdust and bran.
fruiting temperatures should be between 16-18°C.
I keep my humidity above 90% as well.

thanks for the response.
I've used bran instead of hulls in the past, but noticed colonization seemed faster on hulls vs bran. I'll tone down the N and switch back to bran for the next batches and take notes.
Was worried it might be the coir. Does shiitake not like coir? Too much lignin, not enough hemicellulose maybe. It's nice to use in my substrate cause it's agricultural waste from trays of harvested microgreens.

I don't know it's particular taste for coir. However, I do know that my blocks fruit and I use only beech sawdust and bran 
For gourmet blocks, colonization speed isn't necessarily the most important factor. Ok, you need the blocks to colonize before they get a chance to contaminate. I find my fruits are more abundant and of better quality when the process takes a bit longer.
Also, if I remember correctly, 3790 has a ripening phase of 5 weeks. I should check my notes to be sure though. So after full colonization, you give it another 5 weeks of incubation, then 10-14 days of cold store.

5 weeks ripening seems about right. I'll try the extended cold store as I've been cold storing for shorter periods. Thanks again haywire:) Really enjoy growing shiitake, so I appreciate the insight.
