If you actually want to diagnose the root cause of the failures, you need to provide some pics or any responses will really just be guesses.  Moisture content would be my primary concern, but maybe other things could be detected.

If you keep messing with the bag, it can easily damage the mycelium and make it stall and restart growing.  Let it do it's thing for at least a week after innoc without touching it at all before you start helicopter parenting it.

MS Syringe > Grain is a crapshoot on outcomes and MS Syringe > LC is extremely risky contamination wise - sometimes the mycelium forms, survives and will fruit, but often it won't.  At best the results will be hit and miss.

To know which medium colonizes faster you need a clean isolated set of genetics as MS grows typically will not have consistent growth which skews any results.

I can’t find a canner anywhere.  Not even online.  Believe me, I’d much rather be making my own then getting off these sites.  I have seen regular pressure cookers but they aren’t large enough to fit the bags or jars.  Once they get to a certain size they become canners I guess.

What do you need a canner for? All you need is a pack of glass mason jars and grain to fill them up.

You can get away with a big pot with a lid for over 2 hours. Albeit with a higher contam rate but it still better then nothing. Fill the pot up with water so its less then half way up your jars. Have a rag or something on the bottom to keep the jars off of the metal. You need to keep an eye on the water level and refill once or twice because it may dry up and fuck up the bottom of the pot if you are not careful (or drank too much).
