Pressure cooker dried out-and do I still have time to grow?

This is my first time cultivating. I'm growing cubes using a PF tek with 12 1/2 pint wide mouth Kerr jars. I followed everything exactly - even getting a
pressure cooker despite the fact I read it may not even be necessary. But I didn't know anything about pressure cookers and have never used one so I only ended up getting a 6qt. Found out soon enough that it couldn't hold any more than 4 of the jars using the rack that it came with. Also is a pretty shitty cooker that doesn't let you set the PSI yourself (has different modes and is a bit under 15psi).


I sterilized 4 jars in there successfully this afternoon. Then, as the rack that the cooker came with took up too much space, I tried to make a makeshift rack using the ends of soda cans and was able to fit the remaining 8 in by stacking. I was so happy. Felt like I had just saved myself a bit of time. Except when I turned the cooker on, I realized there was a problem. Steam was coming out almost like a normal pot and then I noticed it was coming out of the sides. I noticed there was even a small puddle next to the cooker. When I opened it, the empty pot confirmed it had boiled off and likely not pressurized. I was so pissed. I don't know exactly what happened, but I would imagine that the way I tightly crammed the jars in may have prevented the lid from closing correctly. Thats the only thing I can think of-  I shut the lid and made sure the valve was not turned to pressure release.

I feel I may need to redo the entire process now. The other jars will have sat out for days by the time I redo the other ones. I could inoculate but I fear that I would contaminate the syringe by inoculating those 4 on a different day than the remaining 8(can I do that?).

It isn't so much that I am impatient, but more that I am worried. I cannot wait much longer to inoculate jars.  I leave on vacation in mid-December and will need to have harvested by then as I won't be around to mist them or anything. From what I hear, it takes around 5-8 weeks from start to finish. I am concerned that I will run out of time, especially if I need to run back out and spend more money on another pressure cooker (though I'm inevitably going to get a larger one eventually anyways as I won't want to only sterilize 4 jars at a time forever). Am I running out of time to have this completed by December 14 or so?  Or am I good to figure it out for a few more days and perhaps get a new cooker?

Maybe just operate the PC like it says in the manual and it will work as advertised? :shrug:

No issue in using a bit of the syringe now and later. As long as you're not sucking things back up into it, and flame sterilize before use and putting away, it's fine.

Don't mod pressure cookers unless you know what you're doing (which isn't that hard). Them things can be dangerous.

It's also never a good idea to do something in this hobby with a set timeframe, grows can, and very likely will, take longer than you think they will at the beginning.
