Shoebox questions & concerns

Hi everyone I just wanna say good day to you all. This is my 1st time trying shoeboxes and my 3rd time altogether at growing & that being said I am a newb and any information is always greatly appreciated.. The tek that I have been using said to use a top layer of coir “casing” which I did not get a chance to try this go around, will not using a casing layer effect anything and would does this casing layer make much of a difference? Also 2 of my tubs look to me to be fully colonized and have pins everywhere on the top and sides and a couple of them are already popping up... should I be fanning them at this point to give them some Fae?

Shoebox casings really just help with creating better surface conditions and reducing side pins, but they aren't necessary. Just expect to pick off some annoying side pins if you don't have experience dialing in surface conditions I would recommend using one next time since you only really benefit from casings, but this grow will be fine, and the benefits are not that significant - more a thing of preference for most cultivators.
Don't fan. Fanning as a whole is an outdated technique. Passive air exchange from gaps between the lid and the box should be all you need. If your substrate is too wet or your mushrooms get "fuzzy feet" you can increase FAE by unlatching the lid and flipping it upside down. Depending on the style of lid this should create larger gaps/potentially some small holes that increase the FAE.
If they look dry after a week or so you may choose to mist them, but generally shoeboxes are set and forget meaning there is enough moisture in the substrate to last them through each flush (with dunks/heavy mists in between). This is assuming you got your field capacity right.
It looks good to me as it is though

I appreciate the tips, I have small amounts of sitting water around the edges where the condensation has dropped down the sides.. should I possible open the top for a little more air or is this okay??

Leave it latched until the fruits hit the lid. Then unclip it. Shoeboxes are set and forget. That one looks like it'll treat you well
