Not the brown lines on the stipes, but on a mushie or 2 in there you might be able to see what I'm talking about, they just look dented..I'd love to know what that is.

They look good to me.  That's not bacteria.  Sometimes fruits become deformed when the substrate is over overhydrated (short fruits, lumpy fruits, odd caps, etc), thatd be my guess for what's happening.  Overhydration can also be determined by the brown marks on the stems.

Word.  I meant from how you prepped your substrate.  Like possibly over field capacity.  Regardless it looks quite nice..!
