Making some croquettes. It’s a lot of work. Insanely good though.

I’m also making pigs feet, and a duck.

Those vanilla porters are delicious!  I add a dab of super chilled cream to them and it tastes Uber good :thumbup:

I decided on a Guiness Extra stout. Ox tail is in.






We do an annual meat festival at my house for my wife's birthday. Her birthday is in July... So here we are. We scrapped some friends together and will do this outside in the 55 degree weather. I'll build a nice fire to stand around. Everybody brings a meat dish. Then we just pick and drink all day.

I'll fry the ox tail tomorrow into the croquettes. The pig feet will cook tomorrow. The duck has already been blanched in sugar water. I'll let it get a little funky by letting it sit out over night. Then I'll smoke it for a few hours and crisp it on the fire.

The idea has always been that everybody makes whatever they want but they don't have to share what they are doing. We've had everything from sweet bread taco, pigs jowls, hot dogs, balogne, and everything in between.

Dude that is so awesome I can't even begin to explain. Sounds like a segment they'd have on Parts Unknown (RIP Anthony Bourdain :sad:).

i hate beer! it's EXPENSIVE and its's only contains a little bit of alcohol and it's such a fucking scam! WHY CAN'T THE LCBO BE OPEN ON WEEKENDS?!

I’m currently enjoying a Vanilla Cream Ale with a splash of chilled cream.  No, it doesn’t curdle much at all if conditions are right.  Use a splash of heavy cream or half n half with a drop of caramel and learn the godliness of this method  :drooling:

I usually let the cream freeze into a big ball ice cube and then pour my beer over it.  As it melts it infuses the beer with the creamy flavor.  Very good.

beer does taste a lot better then my vodka though. I usually just drink my vodka straight out of the bottle but then I ended up spilling some on my landlords couch at my old apartment and got cigarette burns on it and it wasn't even my burns though it was my friends but I was responsible as I could of been and I took the blame for it and owned up to even though I don't smoke cigs anymore. and im 18.
