I have no idea what’s causing this. I’m drying as I have been but now I’m losing fruit after fruit. Please help

Are you drying with dessiccants? That's not how to properly dry shrooms it's for keeping properly dried shrooms dry for long term storage. If you're not using dessiccants then what kind of method are you using? The only way to effectively dehydrate mushrooms is using heat and moving air, aka a food dehydrator.

Are those wild?
It looks like they’ve got something rapidly decomposing them and you need to use a real dehydrator or just toss them.

Yeah. I have a standardized dye bucket with some damp rid. It’s always worked before but for some reason my pans are turning to mush. I lost a couple the day before when they were just air drying over night. I don’t know why.

They are wild. It seems to be the bigger fruits going first which is the biggest tragedy. Desiccant shave always worked before. I’m just not sure why they are rotting

It's because dessicants are the worst way to go about for dehydrating mushrooms

I'd say they had pretty healthy bacterial colonies on them and you're drying to slowly.

do you have a petri dish you can scrap some of that onto and see what grows?
Is there any chance they got frozen? I froze part of a harvest and when they dehydrated they were deep deep blue almost black and they had no magic at all.
I tried putting fresh mushrooms in the freezer for 2 hours prior to dehydrating. My goal was to fracture the cells open to pet more of the magic out. It didn't work. I took three grams and nothing. 30min on I took 3 more. Nothing. I took 4 grams 40 minutes later and realized I just wasted 10grams.

no surprise here. Your idea was not a very good one. oh well, live and learn. Also, scraping some of that onto a plate isn't going to teach you much. It's going to grow all kinds of things and there will be no proof that it came from here or there. Correlation does not imply causation. A thing an aspiring rainbow farmer would do well to remember.

Odd thing is, the cubes ended up like crackers. Just right, no problems. I’m only losing pans and it’s only the larger fruits (2-3” caps). The smaller ones are just fine.

Wild fruits can be wildly different in moisture content (as can indoor grown mushrooms depending on conditions), so it's no surprise you had mixed results. There's no point growing mushrooms without a dehydrator. None. I hate you lost your pickings though. Bummer, bud; but a stitch in time...

If you let mush dry too slowly they turn to mush... literally. Smaller fruits dry more readily so the method you're using was able to handle it time. For larger fruits or larger quantities of fruits you'll want to dry with heat and moving air.

I see. I guess I’ll have to get a dehydrator for these. They went for big and beautiful to black goo in 12 hours.

Good advice here on solutions.
But don't throw 'em out. Read this "Shroom TINCTURE (The REAL purple drank)" https://www.shroomery.org/forums/showflat.php/Number/26959691
It worked with cubes. Not sure how long will last, have some stored try at 1 month, 3 month, 6 month, 1 year. But worked great the next day after making it.
I'd only drink a little of it at first, in case issues with edibility of rot. But the boiling water and then ethyl alcohol should kill most things, and I'd take a small sip of tincture of that.

Dessicants are really only effective at finishing the last bit of moisture. You should be drying them with a box fan or ceiling fan on high for 12-24 hours before using desiccant.
Better yet, spend the $40 at Walmart for a presto dehydro.
