Do different varieties of oyster have different flavor profiles?

subject says it all.

Blue, pink, yellow, white.

Are the differences only aesthetic? Or do they differ subtly in taste?

Pinks are definitely different, especially the smell.  Blues/grey/white/phoenix taste the same to me pretty much.  Never tried yellows.

Absolutely, IMO, pinks have a sweet,rubbery(?)smell when fresh, probably the most "fishy"/oyster smell and taste when cooked. Golds definitely smell sweet/very subtly spicy with a real nutty-ness to them.  Very limited experience with blues,but the one culture I've cloned/harvested had the typical faint anise/oyster smell but with Smokey overtones,especially when cooked!
