What should I play? Seeking visually gorgeous, exploratory game reccs

Hi shroomery gamers, I'm a very intermittent gamer, but I've been seeking some escapism, and I'm wondering if you kind folks could give me some recommendations. PC is my main console, but I'm also considering purchasing a PS4 or Switch so that I can play with my partner, so I'll hear out those reccs as well (especially for 2-player games).
I'm looking for something aesthetically well-made, I'm keen on beautiful world-exploration type games. I want the challenge-level to be relatively low, as I'm looking for something I can play once a week or so. Something I can still wrap my head around while stoned or on a light dose of mushrooms.
I have fond memories of playing Legend of Zelda: Windwaker as a teenager, Pikmin was super fun, and I also enjoyed visually absurd games like Katamari Damacy. I've enjoyed some rpg's mmorpg's, but I'm not looking for something so "addictive". I most recently played Overwatch, and I probably will pick it up again intermittently, but I'm looking to supplement that with something more chilled out.
I've heard things about Journey and Firewatch... thoughts? I tried No Man's Sky last year, but found it to be a bit too aimless...though I do like the idea of an open-world game.

Have you played any of Red Dead Redemption? Definitely a visually stunning game with a ton of exploration going for it.
I haven't played this one myself (been meaning to though), but there is an underwater open-ocean game called Subnautica that looks quite beautiful.
One more odd and a bit absurd one is called Everything. That one is quite a bit more aimless, but its still good fun and relaxing with audio from Alan Watts.

I really liked The Witness, which is a very visual game with a strong exploration theme. It's full of puzzles though which might not be your thing. If you want to take a look be careful of spoilers, because the whole point of the game is exploring (both in terms of the island, and in terms of the puzzles too if that makes sense) so if you see too much, you can spoil it for yourself.
