Eryngii in cardboard/coffee - healthy?

Hello people,
My first try cultivating eryngii in cardboard and coffee, something that I saw on YouTube and it seemed to me very easy, eco friendly and stuff..

Well, I spawned these trays with half a quart of grains and waited for 2 weeks to fully colonize the substrate. Haven’t seen any problem or delay in colonization.

When it was fully white I opened it and put them on a big tub with lots of holes.
After a few days of cold it was starting to fruit.

I never grew eryngii before so I was hoping to get some of yours thoughts about them, if they’re healthy, if I could eat them with no problem, and when to harvest them?

Also, something concerns me:
The little discoloration in some fruits, that i will show in pictures below.
And the formations blob-likes, that look like a bunch of primordiais that probably will abort, is it contaminated? Should i take it off from the tub?

Nah those look great man, nice work.  I don't see any issues.  They are pretty close to ready, you could harvest now or in a day or two.  (it's hard to tell when the caps are grown small like that - just harvest when they stop getting bigger if you can't tell).  Discolorations are normal and you don't need to do anything with the aborted pins.
