one thing that hasn't come up with invitro, is the CO2 build up... Did I miss the part where you open the jars to release built up co2 daily? or is this not a concern?

its not really a concern-- if you put foil over the holes in the jar there is a wee bit of air exchange during colonization (when CO2 isn't really a problem anyway) When you initiate fruiting, you turn the jar upside down and the CO2 (having a greater molar weight than O2 and N2) drains out of the holes and is replenished with what ever air happens to be around it... In my tek you can punch little holes right above the substrate (or casing layer if you decide to case) and the CO2 that settles above the substrate drains out this way... in either tek it works fine

Why not just utalise the whole jar and fill it all the way with substrate. On the third flush none of the fruits will be touching the sides and you will have alot more mushrooms.
