Citric Juice and San Pedro

Does anyone know why it has been suggested to add lemon juice or something similar while brewing San Pedro? What is the objective of adding it? How does it affect the brewing of San Pedro?

It forms Mescaline citrate, which is highly soluble and nonvolatile.
In addition to that, lemon improves the flavor.

Whats the difference betwenn Mescaline citrate and mescaline? what has been added to it or how has it changed? What does highly soluble and nonvolatile mean? Sorry to ask but I'm no chemist lol.

Mescaline is an alkaloid, mescaline citrate is a salt of that alkaloid.
Mescaline citrate dissolves to a greater degree in water, and it is less likely than Mescaline in base form to evaporate with steam when you boil it.
When you add lemon juice to the mixture, the acidity will help pull the mescaline from the pulp into the liquid, much like how soap helps fat to dissolve.

Great explanation I understood it perfectly haha. Thank you very much. Oh, I have another question if you don't mind; At what moment do I pour the lemon juice? Since the start of the brew or when it is boiling?

Add it when you start to heat it up. Basically make a soup out of it. I really need to get my hands on some cacti 🌵

I never thought there was much improvement in flavor, more like it's starts off tasting like ass - add lemon and you have lemon flavored ass.

Asante, could you recommend some reading to better understand what Alkaloid salts are? I tried searching for some info and all I get are definitions and sites on what alkaloids are.
