Depression era soup or "Burgoo" the perfect meal for the poor.

I have always been of the opinion that soup is the perfect poor mans meal.

During the great depression "Burgoo" or "Roadkill" soup became a staple throughout much of the country particularly the mid west.

At its most basic all it takes is 3 things to make a decent soup

A Meat
  Starch
  Vegetable
During the depression it was common practice for a whole town or village to bring whatever they had and add it to this soup.

Every individual or family would bring one thing.

I think one of my favorite things about soup is the room for creativity.

Meat - any will do, particularly something fatty.
Literally the perfect way to use scaps.
Ham bone was long a staple for many American slaves, because you can never really get all of the meat of of it.

Starch - potatos are usually my first choice, rice, pasta, beans or corn also do just fine

Vegetable - Any will do, sautéed onion/garlic in oil before you make the broth is kind of a must.
Literally any vegetable though, a good way to clean our the fridge of leftovers.


Other than that all you need is salt and pepper.

A diverse spice cabinet and some form of spicey is also awesome.

I personally like to have a little bit of white vinegar to add to it.

I like the idea of the town or neighborhood coming together and using a little bit of whatever people have.

I love lazy fall and winter days cooking down bones and making broths. I really enjoy gumbo or jambalaya when I'm clearing out the leftovers. Or a thick wild rice creamy soup made with the leftovers from cooking any ol bird. Typically turkey after Thanksgiving.

A must for any soup maker needs to be good home made stocks and demi.

Chicken, hominy, okra, tomatoes, onions, cayenne.

Lamb, potatoes, chickpeas, peas, carrots, onions, tomatoes, rosemary.

Stuffed pepper soup, ground meat, half pork half beef, rice, peppers, onions, black pepper.


Like to add a raw egg and some Kimchi to the hot soup/stew in the bowl.
