How long do fully colonized Shiitake blocks stay viable for?

I have a bunch of colonized and browned shiitake blocks spare and was curious how long they would stay viable in my incubation space? Or should I move them into my coolroom?

Can you clarify what you're talking about?
I mean they're viable till you fruit them... are you wanting to hold off fruiting or what?

Yes wondering how long I can hold off fruiting.
I was producing a certain amount of shiitake for my customers prior to the covid lockdown. When the lockdown hit my sales dropped off, so I cut back the amount of shiitake blocks I was fruiting each week.
Since shiitake have such a long incubation time, I'm left with a substantial backlog of bags that are ready to fruit. Just wondering how long those bags will stay viable if I leave them in my incubation space?
The longest I've kept them in incubation is 16 weeks, curious how much longer I can push it

From what I gather, once they’ve browned. you can dry them all the way out and rehydrate and fruit again. Cant remember if I read that here or off-site and not sure what the shelf life is...I have a few that have been sitting dry since last year that I’m going to try to fruit.

my guess as long as still alive and not cracker dry at least a year.. ie log can fruit multi year after a hot dry summer and cold and dry winter....
casing with some wood chips prob would hurt to give a little more nutrients along with a dunk.

I've fruited some 6 months old. The problem is when they start pinning. If they fruit in the bag they waste a lot of energy. Climate conditions are important, minimize temp swings.

That's what I was gonna say, as long as you can hold off pinning you should be fine, as long as you're not running into mold. Check the substrate surfaces as well as you can through the bags and like mentioned, avoid temperature drops that trigger pinning but you probably know this.
