"Pasteurized" straw/hpoo smells rancid

Four days ago I prepared 5 quart jars of straw + dry composted horse manure + verm + gypsum. I opened two jars today to spawn to shoe boxes and was hit by a putrid smell. I assume this is not the smell of beneficial bacteria.
Just in case, I thought I'd ask here: 1. This is a very bad sign, right? 2. Can I salvage the remaining 2 quart jars by PC sterilizing? If so, how long?
The substrate did NOT smell before I pasteurized it. Well, maybe a little earthy. I would describe the smell today like rotting vegetables.
I'm used to sterilizing my substrate, but this is a different type of substrate than I've used before.
Method: I boiled 5 jars (slightly over field capacity) in my PC without the lid keeping the core temp between 140F and 180F for just over an hour. The jars were lidded, but the center one had a meat thermo stuck through foil.
I went ahead and inoculated one shoe box with grain at 1:4 and put it outside. No way I'm keeping that in the house!

180 is probably too hot. I keep mine at 168. (I pasteurize in and Instant Pot)
I recently had a similar issue, I think I packed the jars too tightly and also too full. I assume you filled the PC with water? If so make sure the waterline is above the poo line.
Thats where I went wrong last time. I believe the part just above the waterline did not get hot enough to knock everything back.
Not sure if it was taboo or not but I re-pasteurized the smelly jars... will have to wait and see if it worked or not. I mixed the new old bulk with grain yesterday.

Yeah it was an accident that it went over 180. I cooled it back down as quick as I could. I would have expected over-sterilization from that tho. Possibly the water height was a little low.
Did your jars still smell bad after you sterilized them?

Yeah they still stank after LOL but not as bad.
Got my fingers crossed that the myc will power through...I guess it's just an experiment at this point.

I think I'm going to make new jars. This is my last jar of grain spawn, and I don't want to waste it. Will probably sterilize my straw/manure mix this time, since I had such results when I tried to pasteurize.
