Is it okay to cook grains at 16 psi?

I think my gauge might be off and needs to be recalibrated because my weight doesn't start wiggling until it reads 16 psi, but for arguments sake let's say I am PC'ing my rye at 16 psi for 90 minutes instead of 15 psi - is that going to have negative consequences? Does it mess up the rye and affect inoculation?

you just want it at at least 15 psi for the amount of time youre going for.

Correct. My presto i run at 17 psi with 3 quarters on the weight. My AA's I run close to 20.

Running the PC at 16psi gives you a temperature of about 252F,
while 15psi is about 250F, so pretty much negligible. It will not create any problem.

You wanna stay under 20 psi. 3000 psi is greater than 15 psi but i wouldnt recommend it.

Okay, so if it happens to run at 16 psi or 17 psi it's still all good and won't negatively affect the rye like overcooking them or making them sprout or anything like that? I'm worried about what overcooking might do... Reason I'm concerned is because I think my gauge needs to be recalibrated because whenever it hits 15 psi the weight doesn't wobble or shake. Only when it gets to 16 psi on the gauge is when the weight starts rocking, so I think my gauge is off, but I'm thinking if it is really at 16 or 17 psi what the consequences will be? I should go by the weight wobble anyway rather than the gauge because the weight wobbling is more accurate correct?

I usually do 4 hours@17-20 psi so I think you are good.

Trust the jiggle valve before the gauge.

Yours is likely working within specification. The expensive All American PCs have a gauge that reads up to ±2psi of the actual pressure which is ±7% on a 30psi gauge. Cheap industrial gauges are often ±2% at mid-scale (±0.3psi at 15psi on a 30psi gauge).

The gauges on consumer-grade PCs don't even have an industrial accuracy rating because it's just not that mission-critical for the intended use.
