What are the optimum rates of temperatures you want to keep the tubs at for colonising and fruiting ?

My best experiences were between 68-72°F.
But anything from 65-75°F should be fine.

Ideally you want high 60s to mid 70s. Higher temps are at higher risk for bacterial contamination while low temps slow colonization which can lead to other contamination of uncolonized sub.
